    *These recipes serve 4 people quite generously
    Pea Soup:
    1 medium onion
    1 large carrot
    2 stalks celery
    2 cloves garlic
    1 cup of cubed good quality ham (Like the kind you have at Easter)
    water or stock (Enough to cover the peas, plus 1 inch)
    salt and pepper to taste
    dill--about 1/4 cup. (I like alot, but you can adjust to your taste)
    Classy Greens
    2 big handfuls of Pea Shoots (or swiss chard, kale, spinach or rapini)
    1/4 of a green cabbage
    big handful of frozen peas
    4 tbsp olive oil
    pinch of chili flakes
    3 cloves of garlic
    salt and pepper
    feta cheese
    *If you are using spinach, put it in at the end (with the frozen peas) as spinach cooks super fast.
    *if using chard, kale or rapini, chop into 1 inch pieces
    *Both these dishes are vegetarian and vegan friendly! Just cut out the ham and feta--and BAM!
