This was amazing. To my marinate I added some onions, lime juice. Instead of a beef stock I use a red wine reduction. Out of this world amazingly delicious. Try it !

Omg tomorrow I'm making them
Insanely delicious and my first time cooking lamb. I cooked it on my Blackstone griddle and put the grill scrapings in a cast iron pan to make the pan sauce. Made green beens , seasoned potatoes and a cucumber salad with sour cream which complimented the potatoes, of course, but wound up tasting like a deconstructed Tzatziki sauce which brilliantly complimented the lamb as well. One of the best meals I've ever made with your lamb recipe being the absolute star. I thought my wife loved me before but now she follows me all over the house. 😂
This looks delicious! The only suggestion I would recommend is to use avocado oil instead or another high heat oil. Olive oil is not meant to be used on high heat.

There are blended olive oils that are ment for frying
Rubbish. I sear with olive oil all the time and no burnt flavor. Don’t cook with Olive oil because it has a low smoke point. This is what you hear people saying all the time, but it’s not true. Try for yourself and see. You will change your mind
