Make this delicious curried cabbage side dish | Fried Cabbage

Cabbage is one of my favorite side dishes, its super delicious, budget friendly and goes with almost anything. Pair it with roasts or serve with rice. My fav way is to serve it in a bowl and set it on the table and let your family or friends dig in.
Ingredients
I Green Cabbage, quartered and sliced
2 Tbs vegetable oil
1/2 Red Onion
1 Medium yellow onion
1 Tbs Garlic and ginger paste ( 1 tsp of each )
1 Tbs Curry powder
1 Tsp Mixed herbs, dried ( Italian seasoning works)
1 Cup carrots, julienne
1.5 cups Bell peppers ( yellow, red ,orange and green)
Salt and pepper to taste
2 Scallions, chopped
1/4 cup Cilantro, chopped for garnishing
