Crispy Bhajia Recipe ( How To Make Bhajia)

- Bhajias are these crispy fried potato snacks or can be an entire dish that resemble fritters and are enjoyed dipped in a tangy sweet and sour tamarind sauce or ukwaju in Swahili. Bhajias are very popular in Kenya and most of East Africa and have their roots from Indian cuisine which has lots of influence in the region. Thinly sliced potatoes are dipped and coated with a thin chick pea flour batter which is similar to a tempura and then fried until crispy.
My recipe has added spices for flavor and uses seltzer which makes a very light bhajia batter and gives these deliciously crispy airy potato bhajias.

Oddly, in my husband and my 6 week tour of Kenya we never went to Mombasa. We gauged it too touristy and we were travelling alone to experience grass roots Kenya, that is why we enjoyed the foods the various regions specialised in. This dish looks and sounds awesome! But we only had it in Nairobi.

Its an Indian Snack, specifically South Indian Called 'Bhajji' .......wr usually make this with slices of Raw Banana, onion, chillies, Snake guard, Spinach leaves,bread slice, Eggs, fish, prawns!!! Try out and enjoy!!!
