Ingredients
Crust
2 cups (8 oz.) almond flour
4 oz. butter, melted
¼ cup (1¾ oz.) erythritol
¼ tsp salt
Filling
2 lbs (4 cups) cream cheese
1 cup heavy whipping cream
½ cup (32⁄3 oz.) erythritol
2 tsp vanilla extract
1 lemon, juice and zest
Instructions
Add all the ingredients for the crust into a bowl and mix until a sandy consistency.
Put the mixture in a 9" (23 cm) springform pan. Using the bottom of a measuring cup or your fingers, press the crust into the bottom and up the sides of the pan. Put it in the fridge.
Add all the filling ingredients into a big bowl. Using a handheld or stand mixer beat the mixture for about 5 minutes or until it's a fluffy consistency. If you have a mixer with a paddle attachment, use this to whip the filling for a smoother, more consistent fluffy texture.
Pour the filling over the crust and smooth into an even layer using a spatula or spoon.
Cover with plastic wrap and put in the fridge for at least three hours or overnight.
Remove the springform pan just before serving by running a thin-bladed knife around the edge to loosen the crust from the sides of the pan. Open the clamp and expand the sides of the pan and release the bottom.
Top the cheesecake with toppings of your choice or serve it as it is.

I would bake the base for a nice crunch. Would not be fully no bake but worth it.
I make this all the time, but I just skip the crust and scoop it into a dish. You can also add different flavors, peanut butter, blend in the berries or cocoa powder and so on. You can do the same in a wine glass if you want to make it fancy for a dinner.
I'm going to skip the crust. Allergies = almond (flour)!

I`ve made this quite a few times now and people can`t get enough of it I was driven to do this apart from doing the keto diet it was getting a bit boring just eating fruit and cream, but also I had a cheesecake from Sainsburys at xmas and it made me feel sick with all the sugar, I use truvia in this recipe as they sell it near in Sainsburys for £4 a big bag its good, its a fantastic dessert and not unhealthy. Thanks diet doctor. I personally like baking the crust for twenty minutes so its crunchy like a biscuit base, also last time I did it I use less cream cheese as I prefer the topping a bit thinner this is the hands down the tastiest one I`ve tried
I just finished making this.
I was REALLY doubtful bc I’ve tried other sugar free cheesecakes only to find them awful.
This was very good for a sugar free cheesecake. It’s not anywhere as good as a turtle cheesecake with loads of caramel n chocolate etc BUT, it’s really a good substitute for those days you just gotta have a dessert n not fruit etc.
I baked my crust n recommended that. I used Swerve granulated sugar sub. I was again, very doubtful. I used it in a broc salad n it made my lips feel numb - it tasted ok but Ugg! What was the numb lips about. So, I was willing to try it again thinking this cheesecake would likely be nasty anyway.
Nope! No numbness n it tastes good. (I love swerve confectionery sugar but the granulated was gross the first time I used it).
I encourage you to try this recipe… I cut it in half and it’s still a lot more cheesecake than my husband n I will eat.
If there’s just two of you, 1/4 this recipe. 1/2 batch makes a very full pie pan.

Love your recipes...will surely be trying this one. One suggestion, your videos are concise and straight to the point, which I like, however sometimes they are too short :( I do not manage to read your ingredient captions and follow the video too.
There is a link in the description to the recipe, or you can do what I do....hit pause when each ingredient shows, jot it down, then hit play, etc till you get the full recipe. Easy Peasy.

I am moving towards a ketogenic lifestyle slowly- BUT I am REALLY STRUGGLING w/ the desert options as it pertains to the sweeteners.
I know this is an unconventional question for keto but do you think this recipe will work just as well if I use regular sugar??
Yes, but it's going to be a regular cheesecake with plenty of carbs.
😂 sorry to laugh but yes it will work with regular sugar... but no, it will definitely not be keto or get you anywhere near keto 🤗. Maybe just try to use less sugar. That would at least be something.
Go on Keto and use Eritrol as a sweetener. You'll be fine. Remember your electrolytes
We would not recommend using regular sugar. Our top 3 recommended sweeteners are erythritol, stevia, and monk fruit.
I use SPLENDA instead of SUGAR ALCOHOL as it tears my stomach up very BADLY. Add Splenda to taste, more or less, but if you never used sugar alcohol before try it out in a drink or something first. The splenda works.
the problem is that the 4g is more than likely net carbs, not total carbs

In some recipes coconut cream can be used in place of heavy whipping cream, but we have not tested it in this recipe. It would definitely lend a coconut taste.

Use Splenda, sugar alcohol tears me up.
Splenda is full of bad chemicals and GMO. I will be using allulose. Dr Guntry sells it.

Yes it does!
I do not think so, the almond flour is very dry, we did not like it. we cheat a bit and use some graham crackers with it.
I found that toasting the almond flour in a heated pan helps the flavor. But keep an eye on it - it'll go too far in a blink of an eye!!

Have you addressed sugars vs. alcohol sugars such as Erythritiol in the Keto diet system, pro and cons. Also, address how or why sweeteners like Erythritol effect a1c readings. I used alcohol sweetener exclusively with 100g/day carb and still had an above average a1c after 6 months. Is it the test or the sweeteners?

@@dietdoctor How exactly do you square your statement above with paragraph 2 under ratings in your article. They say two different things. It either does not raise or it is not known, can't be both.
Don't bother, spend $25 on ingredients still tasted plan. If you want a cheesecake just eat the real thing. I will stick to my lamb roast.
Erythritol is some nasty chemical crap, better to use natural brown sugar, just don't eat too much Cheesecake.
If you're eating keto brown sugar won't work. Even just a half a slice would wreck my carb count for the day if I were to use brown sugar.
@@HappilyCarnivore You should not be "counting" anything so whatever you are doing is not working. If you are unnecessarily paranoid about eating a small amount of sugar every few days then simply do not ever make a Cheesecake. If you eat well generally you can eat this and not stress about it. Zero carb eating is ideal but not the be all and end all of life. If you do make this do not use Synthetic sugar substitutes since they are really bad for your system and especially bad for your brain health

@@dietdoctor ok thanks but in my experience Erythritol and other sugar substitutes were not good for my stomach inc. date sugar and monk fruit sugar. Tried them all. Appreciate the recipe , will be making a lovely cheesecake this week
