Oh my word. Am 60 and this reminds me of how things were in the early 80s in Rusholme in the original curry cafes. Chicken on the bone was my go to curry back then. When I went to uni in Sheffield in 1984 it was a different yet still old school. British culture at its best. So good I can taste it now. This needs to be preserved. Keep up the old school videos. Your cousin is a wonderful chef and a true gentleman of the culinary art of BIR. I love his hat and his tank top too.

It would be interesting to see if he purchases stuff differently than you do. Plus for me here in the states I am unfamiliar with what to buy exactly. Hey Latif I remember eating a proper chicken vindaloo on the bone from the Plaza Cafe in Manchester around 1980. Can you ask your cousin to recreate this very hot old school vindaloo. At the Plaza the menu stated Vindaloo either hot very hot or Suicide. Oh happy days . The curry was served in a bowl with a spoon and a pile of chapatis on a plate.

We use to get takeaway from a place in Slough 20 years ago called the kabana, they use to do a delicious saag and potato curry using tinned spinach, really dark in colour and really spicy , just wondering if your cousin has a similar old school recipe, keep up the great work, you are much appreciated 👍

I have a question about the base gravy. Did you remove the whole garam masalas spices before you blended the gravy ? or do the whole spiced get blended in the mix?.....this looks like an awesome recipe.....khub bhalo bondu!!!!
Just made the gravy with the chicken. I notice for the bhuna there's no tomato added whereas nearly all BIR add tomato puree to the pan. Also no kasuri methi. Is this because the recipes are home style? Amazing, thanks!
