    1 egg + 1 egg yolk
    Egg white 80g

    Cake flour 50g
    180°C (356°F) for 10 minutes
    Lemon Raspberry Syrup
    Water 120g
    Lemon juice 40g
    Sugar 40g
    White wine or sweet wine (optional) 30g
    Some chopped raspberries
    Lemon cream
    Zest of one lemon
    Lemon juice 40g
    Sugar 90g
    2 eggs
    Heat to 82°C (180°F)
    Let cool and take 80g
    Softened unsalted butter 80g
    White chocolate cream
    White chocolate 100g
    Liquid cream(for ganache) 50g
    Liquid cream 100g
