Great video! I use a stella apple cider brine with a mix of ingredients and my family and friends can't get enough. One thing I really like is how the brine allows for a hotter cook without worrying about drying out the wings.

Not gonna lie, as a southwest Virginia boy. I didn't like the mayonnaise sauce when I first traveled to Alabama. I was younger. I may try your recipe. With your twist.
I definitely recommend trying it. I made one a couple years ago and didn't think it was that great. Tried it again a few weeks ago when Tuffy put his recipe out. It was awesome on pork loin and chicken wings. Grilled broccoli too.
Love the recipe. Use grams, people will complain, use Oz people will complain, use tablespoon etc, complaints. Your recipe make it the way you want. If it tastes good everyone will use it
I had a customer at another restaurant (sold Q 4 years ago) come in and order wings. I asked him if he wanted white sauce or red. He asked what white sauce was and as soon as I said mayonnaise , he said" oh no, I don't like mayonnaise!" So brought him a dozen wings with red bbq sauce and one wing with white sauce. The next time he came, he ordered a dozen wings in white bbq sauce.
*WHICH* kosher salt? Tuffy, you should know better with all of your experience. Diamond Crystal vs Morton is going to give you vastly different salt levels. Always by weight if you aren't specifying!
