Cornstarch on wings is the best thing for a coated wing on the smoker that I have found. It does give them that extra crispiness that the skin alone does not provide. I still prefer them naked but it is good for a change in pace.
Can't go wrong with any of them. I've even done smoked and then high heat grilled (or under a broiler) to get a little char and crisp up the skin. Perfect example of simple foods can be the best foods...
When doing wings, I like to keep them intact, so I get the skin stretched at the joints. If I cut them, that membrane between the drumette and the flat coils up and I don't get it, but uncut that stretches out and gets nice and crispy.
I love direct heat grilling........my meadow creek bbq42 yields the best smoked/grilled/roasted wing. I can turn out damn near a whole case of wings in about an hour.

I think blue cheese rocks! Cooking Thanksgiving for a couple dozen people this year, 2 turkeys deconstructed, breasts smoked to ~150F, thighs deboned and grilled to ~190F, wings JUST LIKE THIS, leaving the drumsticks. Maybe popsicle and teriyaki to 200+F?

Funny, I made my simular twist on some of these last weekend. They came out superb. I perfer Lighthouse extra blue cheese or country style ranch. Paired with country style potato salad and churched up bbq beans. Grandson loved umm..
blue cheese for spicy wings. ranch for savory wings. no sauce for sweet wings. smoked then fried is the best way to cook wings. this all my personal opinion.

Looks great. Did some wings on the smoker a few weeks ago and used the Leroy and Lewis mustard recipe for the sauce. They were amazing. I won’t harass you about the dried sausage this video, but you still totally should make it.
You know what they call Buffalo wings in Buffalo? Wings. One of the best ways I've made wings is to smoke them first, then grill to crisp them up. Finally, just toss them around in a bowl with melted butter and Worcestershire sauce.

I use Ranch of Blue cheese for the celery that goes with the wings. I never use those sauces on the wings.

He's cooking it direct heat over the charcoal coals. So there is no difference. He has the lid closed except when flipping/mopping.
