    The only thing. For me, I don't add salt because the saltfish is already salted. Even when you boil it, there's still some salt left in it.

    I remember my mum making this for us on Fridays topped with black pepper mixed with baked beans and Tomatoes after football well worth it. Brings back good childhood memories in the UK where I was born.

At first I was wondering why you did not give measurements, then I realized that the measurements are in your cook book, Caribbean Cuisine Cookbook.     Hey Chef, I too am a Chef, I put little baking powder in my fritters, my mother made hers same way, family recipe over 100 years

      Baking powder allows the fritter to absorb too much oil.

      My mother is 85 yrs old so she is the original old skool. My fritters can never taste as good as hers but she also puts tomato but mashes it out! Lickle scotch bonnet in mine tho as I like a lickle kick in a it!

    I made this KETO style 😋 I used most of what you use but I use Almond flour instead with two egg instead of water, also to eliminate the oil I use a mini waffle maker with a little spray of olive oil. It turned out Yummy as well👌🏽😍👍🏽

    The way I do it is to mix the flour and water first, little at a time then all the other ingredients after. Watch the salt amount, if you haven't soaked and boiled the salt fish long enough then it's still salty. So taste a piece of the salt fish to see how salty it is. You can substitute the salt fish with shrimps. Most delicious when they are just made (still hot). One of the best Jamaican snacks, you can never eat just one. Keep up the good work Chef Ricardo.     Yes looks nice. Thats exactly how i do mine but without the salt and i add west indian hot pepper sauce. Gives it that colour and spice

      Rose Jackson use salt fish or labeled salted cod fish only.

      @Rose Jackson...there are various types of salted fish, you don't have to use cod but it's better if the fish is salted or smoked. I've used smoked cod & smoked haddock to make fritters too & it's just as nice

    We sometimes forget what a great substitute chicken and beef broth can be instead of plain water.

    Nice mi chef , but coconut oil should be used instead. Olive oil when heated becomes harmful to our bodies and should not be used for frying at high temperatures.

      Ricky Myrie coconut oil as well. Grapeseed oil is a perfect light oil with no taste. Very healthy
