These are amazing!!! They are sooooo fudge & soft. I did use lakanto instead of swerve. & my eggs weren’t room temperature(no patience). They still came out great though! Anyways making these again tonight! Need some comfort food with all this corona virus stress!

Yeah, I don't have room in my kitchen for one, so i literally just use a hand mixer every single time one of these YT guys says to use a food processor, and it works just fine. The idea is to incorporate the ingredients. Not to pulverize anything, so it works just fine. A whisk with some elbow grease will likely have the same result. Just make sure your coconut flour is sifted to avoid clumps.
Well I made them yesterday and waited to try them till they cooled completely in the pan just like he said. The flavor is great, but still had a funny texture. I put them in the fridge in hopes of “hardening” them up lol

Almond flour can make them very dry and sandy. If you're going that route, a trick I like to use is to sift the flour first and let it soak in 1/2 of the liquid, so it creates like a mushy goo and really hydrates. Then it incorporates a lot smoother.

Check out Netrition. They're about 6 bucks. While they might be cheaper elsewhere, this site has a mega ton of keto stuff, like collagen, low-carb wraps, chips, pastas, etc, so it's a great locale imo.
Eggs in a recipe like this are merely for binding the other ingredients as they cook and to provide structure and moisture, not for flavor or anything. So you can use something like tofu, chia seeds, or even a foam mix of baking soda and vinegar.
I'd check for something using sugar alcohols; there should be a few types who do that, so you're getting 0 net sugar effect on your metabolism. I don't have any brand recommendations for Sweden, however; but that's what I'd check for in the ingredients.
I don't make coconut flour recipes a lot, but when I do they're EXTRA fudgy keto brownies ;)

The water in the pan to make the parchment paper stick was very smart I’m going to start doing that
