I can't believe people don't like salads when salads like these exist, i'm sorry you grew up eating iceberg lettuce with cucumbers, tomatoes, and croutons with ranch but there is soooo much more texture and flavor out there that can give you a super well balanced and filling meal

Roast all the veggies! Beets, cabbage wedges (they char and have bits where they taste like toasted marshmallows! Carrots, squashes, brocc & cauli, rutabagas, any of em! Also make greens chips-kale yes, but chard, mustard greens etc
The last two recipes contain butternut squash. Butternut squash is the hardest vegetable to peel and cut, it takes about an hour. Then you have to prepare the rest of the salad ingredients. In total, the last salad takes at least 2 and a half hours to complete (using fresh ingredients). Just a prior heads up for everyone ❤
What temperature and for how long do you cook the squash/shallots, and the squash/Brussel sprouts? I burned mine last time and I re listened a couple times seeing if you said it and I don’t think you did.
I love putting dressing on cold rice and then adding fibrous veggies to it too But I don’t put grains and starchy vegs together, it’s kind of overkill for me

These salads are what I call warm salads. I just throw my leftovers on top of my salad greens the next day and it looks a lot like your salads. It would be great if you could offer some oil-free dressing as well for those of us who don't use oil.

I would make the fixins in a bowl then plate it on a bed of lettuces. The lettuces won’t get wilted and slimy in the fridge.

Apple cider vinegar based dressing are always a favourite of mine! Especially when mixed with mustards, great alternative to oil :)
