Note on the wet eggs. They do keep cooking, but if you want to help them along, find a mixing bowl bigger than your plate. Fill (halfway is fine) with hot water. After plating the eggs, dump the water out of the bowl, give it a quick towel dry, and plop the bowl over the plate. The heat from the bowl will make sure the eggs are fully cooked. Learned this from a friend who was very paranoid about eggs being totally cooked, but still wanted carbonara. Love the video, don't know that I'll get the tornado. Will probably just be scrambled omelet over fried rice.

The only non-negotiable element to success, I think, is having a great non-stick pan - well-seasoned cast iron, ceramic non-stick are perfect (the popular Hex-Clad would fail)! One doesn’t even need a whisk - a single chopstick or fork work just fine! It might help, too, that the eggs be close to room temperature to start - US food regulations require eggs be washed of their protective layer, sanitized, and refrigerated, so need to ‘warm up.’

Just a friendly tip for all you want to be Jamie Oliver cooks, and that is after you get the ingredient and the temperature perfected, take your pan of the stove and sit it on a stone type "lazy-susan" and instead of trying to turn the chop sticks, turn the last susan until you are happy with the resulting shape. These chef's in some cases do this sort of cooking for an occupation so it is easy for them, but I have found instead of trying to turn the chopsticks which is pretty awkward. hold them still and turn the Lazy Suzan, and if all else fails there is nothing wrong with Scrambled eggs. ha! ha!. Not enough oil in the pan. They use a ton of oil to keep the eggs from attaching to the pan even in the least bit. Use more lubrication!
