Hi everyone!! I'm so excited to be sharing this recipe with you all, especially since I know it's going to be so worth it. Thought I'd leave a written version below so you can all give this a try at home :) Ingredients: 2 cups flour 1/2 cup (+ around 2 tbsp) water 1 tsp salt Some oil 1. In a bowl, slowly combine water, salt and flour. 2. Once a rough dough is formed, keep kneading it for around 7 to 10 minutes. 3. Cover the dough with a wet towel and rest for 10 minutes. 4. Knead the dough for a few minutes more until surface is smooth. Lightly coat it with oil, and roll it out into a disc shape. 5. Slice the dough into strips, transfer to a separate plate or container, and generously brush on another layer with oil. Cover with plastic wrap and rest for 2 hours. 6. Stretch out the dough by pressing gently on it first, then pinch the two ends and stretch/slap it against the board! 😂 For the sauce, I just tossed in some chopped garlic, chili, crushed red pepper flakes, scallions, poured some hot oil over it, and added in some sugar, soy sauce and vinegar! Super quick, and super good - let me know if you give this a try!

Inga! I’m so glad to find an easy pulled noodle recipe. Other recipes use weight/kitchen scale to measure out the ingredients. When measuring your flour, do you densely pack it in the cup or a loosely pack the flour? TYIA :)
i made this just now and the recipe worked! i followed the exact same measurement (for water, i eyeballed until i got a nice dough) and same steps. Turned out great and very chewyy. Thank you!
That just looks like some chopped onion, garlic, cilantro, dry chili, topped with some smoking hot oil, and soy sauce after the oil. You can put some vinegar if you are into that.
I got a chance to make these for my family tonight, and they were so so good!!! I will definitely be making these in the future, some skinnier, some fat, but it's the perfect way to get that chewy texture I love so much!

I'm an American who has been living in China for over twenty years and I am a noodle addict My favs are Lanzhou La Mian and Xinjiang Uyghur style. But I like any kind of noodle. So, if I was home in Beijing right now I probably would just ask our Aunti to make some. She's from Shanxi and makes lovely Dao Xiao Mian. Or I could go to my favorite Xinjiang or Lanzhou noodle restaurants. But because of covid I am stuck outside of my home and staying in England where the noodle choices are far fewer and I've gotten to the point where I must DIY I've mastered Jiaozi and Wontons and can make a number of other Chinese dishes. Noodles are next. Thanks for showing how easy it may be!
I tried making these a year ago using a different recipe, but I didn't know the dough had to be smooth, so it turned into a doughy stodgy mess, but this looks really easy and promising!
U can also make dumplings out of that dough, u just need to thin it out by rolling pin and cut out circles using a glass and just put your filling in it and shape as u like then cook it of like any dumpling
hand pulled noodles are the best and the q q factor is way better regular noodles. I make it a couple times a month. Sometimes I make taiwanese style beef noodles soup, but with lamb instead.
