Recipe - Japanese Souffle Pancakes (These are my predictions so I may not be right when it comes to the measurements. Please feel free to correct me if I'm wrong.) Ingredients :- • 2 eggs (separated) (room temperature) • 1 TBS milk • 1TBS oil • 1 tsp vanilla extract • 2 1/2 TBS flour • 1 tsp baking powder • 3 TBS white sugar Method :- • In a bowl, whisk in 2 egg yolks. Mix until well combined and no lumps are formed. • In a separate bowl beat the 2 egg whites. Make sure your bowl is dry and grease free. Next, gradually add the sugar and beat till you have stiff peaks. • Scoop in a little bit of the meringue mixture to the egg yolk mixture. Whisk the two mixtures till well combined and it turns a little pale. Add in a little bit more of the meringue mixture and with a spatula, fold it in. Add in more of the meringue mixture, fold it in and do this until you have mixed both the mixtures completely. Make sure to not overmix it. • Make sure to make your pancakes immediately. If you let the batter sit for too long, it'll turn watery. • Set your non-stick pan to a very low heat. Add a little bit of butter or oil to the pan. Please don't call it Japanese. Soufflé pancakes were invented in Hawaii, by chef Nathan Tran in 2009, at his Cream Pot restaurant in Waikiki. Japanese chefs stole his creation. Just FYI.

I wouldn't describe the recipe as "difficult"; it is more "technical". But I guess that's what you call it when people want a medal for doing a basic adult skill known as cooking. Edit: I went ahead this morning and made these bloody pancakes just to see what the fuss was all about. And since I had made pancakes a billion times, I didn't even look up a recipe. And while I admittedly needed to whip the egg white a minute or two more, I still got a reasonable puff to them. Result: Very eggy tasting and underwhelming.
Any chance you would try making a vegan version of these for your vegan viewers?I had vegan ones during a trip to Japan a couple years ago that were just as soft and jiggly as yours but sadly I have not been able to find a comparable recipe to try them myself at home. Normally I am able to adapt traditional recipes but this one eludes me! Really want them again!!!!
Before the invention of baking powder, meringue was THE WAY to lighten and lift. When the egg whites are stiff, start to heat your pan on low to save the batter from sitting around too long. A restaurant in Tarzana, California makes these and it takes them 40 minutes. Customers eat the pancakes as a dessert.
I make these because I don't have baking powder for fluffiness. Never even realized they were a trend. And I don't have a lid either I use another pan 😂😂

Recipe - Japanese Souffle Pancakes
