  • Handmade noodle ingredients:
    For 2-3 servings
    Noodles:
    Water: 110 g, 1/3杯 + 2 tablespoons
    Salt: 1/8 teaspoon
    Soda ash: 1/8 teaspoon
    (If no soda ash, you can use hot water to dissolve baking sofa first. After water is cooled, mix with flour)
    All purpose flour: 250 g, 1 + 2/3 cups
    Chicken/ meat sauce:
    Chicken legs: 300 g
    Ginger paste: 10 g
    Five-spice powder: 1/8 teaspoon
    White pepper powder: 1/8 teaspoon
    Regular soy sauce: 10 g, 2 teaspoons
    Dark soy sauce: 10 g, 2 teaspoons
    Chili paste: 15 g
    Water: 60 g, 1/4 cup
    Green onions: as needed
    Soup bowl:
    Regular soy sauce, Chinese vinegar,sesame oil, green onions

    Notice how she let the noodles rest repeatedly. That's vital for proper texture, not just to let the gluten relax but also to allow moisture to be fully absorbed by the flour. Well done!

      最怕很多電視上的名厨,每個食譜有50 樣材料和配料,等都買齊了,我已經累得不想做了。還有,很多剩下的特別材料不知能做什麽用,最後都進了垃圾桶。

    tried the recipe today and as I don't have a long rolling pin, I used a pasta machine to roll the noodle dough. The noodle was really good and my daughter kept repeating "I'm shocked"... and yes I shocked myself too. I am an occasional cook and the texture of the noodle was really great! Thank you 小高姐!

      It works on a pasta machine? What setting did you use to flatten the dough? I think my mistake was to dust the dough in AP flour instead of cornstarch and gluten forms.

      Yes pasta machine worked fine for me. I started off with the lowest setting (one with the 'biggest gap'), rolled the sheet twice, then only roll one time with each notch change to the next level until the right noodle thickness was reached. I used corn flour to dust the dough.

    This video is really an eye-opener to me that noodles can b made that simple, at home, with basic ingredients, @ no machine needed! Its so amazing, here in my country we buy d store bought noodles , take home n cook. When d fasting month over, i definitely will try this .     好感动好有成就感!今天我做出了和视频相似度90%的面条🍜!作为一个土生土长的南方人,北方媳妇变戏法似的做面食真的很神秘!
    这是我第一次体会并理解面粉的操作原理。然后就成功啦啦啦啦(唯一问题是擀面过程边边有点裂开,但不影响最终口感)

    我外公外婆生前也很会做菜,外公是厨师,他们总是为了抢做饭而吵架,而且做的饭菜很好吃,我们孙辈过年,过节,寒暑假都会去外公外婆家吃饭,只是当时没有现在这样可以记录他们的手艺,这些回忆只能放在心里了,那时候好美好

    I made these last night with homemade ramen seasoning. They are awesome, but start the noodles after lunch. It takes a while to make them, but well worth the effort. I am having some more now. This recipe makes about 5 to 6 bowels depending on how many noodles you want per bowl. Thanks!!

    The dough looks very nice and smooth. I have to cook this in a few days when my grocery store has some flour in stock again :)

      You may order from King Arthur Flour. I order 8 bags of flour. However, it takes long time (at least for 3 weeks) to receive the order.

    I made your recipe yesterday. It was a HIT!!!!!!!!!!! I am making two batches of noodles today, too! :D
    My rolling pin is not thin and long like yours, so I had to roll mine out. I'm hoping that with enough practice, I'll be making noodles like you. Thank you so much for taking the time to make this simple tutorial. Without you, I wouldn't have started.
