Hi Yan Pan, Thank you for another great Chinese snack recipe. Just want to let you know that the teaspoon of salt is not listed in both Chinese and English version of the recipe.
I don’t think she baked it! That was just the molding. Everything was perfectly cooked she just folded the fried and cooled rice over the syrup and voila! Like that of sesame bars!
Could I coat the rice in ghee and bake the rice instead of deep frying in oil? Would it effect taste, texture or anything that I might need to know of?
I just read that maltose can be substituted with honey but you must keep in mind that honey has a flavor when maltose that is basically glucose and another agent is neutral in taste. You may use fake honey.. they’re just sugar and glucose. 🤷🏻♀️
@@kikilau5006 i think sugar helps maltose to stick and solidify.. like thick syrup. If maltose that is basically glucose and another agent was used alone the crackers will not harden.. they will be gooey instead.
I think you can but must set it on a low temprature like 70 maybe for a long period of time like maybe 3 hours. Just saying do not try prior an online search. You see just like dehydrating tomatoes or herbs.. you need gentle heat otherwise the rice will toast instead of dry and might even change color because rice is starchy.
The thing is the rounded shape rice grain has more starch in it the reason it is called glutenous rice perfect for preparing sweets as you must admit looks more decorative in a cracker than that long grain one. 😁
