      +Gemma Stafford Hi Gemma, thanks for this vegan condensed milk recipe!
      Just curious if instead adding refined sugar, it could work with coconut sugar, demarara sugar or even maple syrup?

    • @marie-cecile9092
      @marie-cecile9092 8 лет назад +1

      +Rach Kate I don't think it will work with maple syrup bc it's liquid but you can use coconut sugar and that kind of stuff (:

    • @rachkate76
      @rachkate76 8 лет назад

      +mcbee Yeah I thought maybe a liquid sugar was a long shot but the others should be ok- unless they'd taste a bit too overpowering.
      I've used coconut oil+ coconut sugar in recipes before and it's got a very strong coconut flavour and dominated other flavours in the recipe.

    Just made this yesterday for use in some sorbet and it turned out great! I doubled the recipe to four cups, used coconut cream instead of milk, and reduced the sugar a lil. It separated quite a lot by the end if the cooking process, but a lil whisking once it was mostly cool and a night in the fridge fixed that, it came out the next morning with ab. two cups. In consistency it's not really condensed milky...more like a thick sour cream, but it's gonna be perfect for my sorbet!

    MADE THIS today, be careful about medium after the sugar dissolves, mine boiled over very quickly, I was cautious to turn up the heat, luckily not too much came over, and it turned out GREAT, cooling now but I taste tested! I used 1 and 1/2 cans of coconut milk and 1 cup of sugar (vegan, of course!) making this for vegan cream eggs!

    I love this so much! It'll be so great to make my own coconut condensed milk. Just a heads up though, a friend of mine (who is vegan) told me that white sugar isn't actually vegetarian because of the processing it goes through, but of course raw sugar is. I'm not sure if that's something you know about but I sure didn't. I'm sure though that the vegans concerned about this would just sub in their preferred sugar. Either way, this is an awesome recipe and I can't wait to use it in some dairy free ice cream!

    Hi Gemma,
    It’s been awhile since you made this video. I hope you can still read my comments 🤠 so I tried this with rice milk and agave. I have my raw rice and blended it in my vitamin with plain water then I poured it into my deep saucepan. I was not able to follow your instructions to the t because the agave is also a liquid so although it boiled the way you mentioned here it did not get into a cream it stayed looking like a confused melon with a bad case of acne.🤭 so I got it out of my saucepan and put in my vitamix blender. The mixture was too think so it stopped my machine.(she’s okay just had to rest😴) so now I got my funny condensed milk that taste good and lasted in my refrigerator/freezer for many months. Yyyhhheeee! I was happy that I did not get one complaint from the people I gave this too that are intolerant to the milk and white sugar. Another,👏🏽but you know what Gemma. I still don’t know what I did wrong or even how to measure both liquids properly so they can get married in the saucepan and make a smooth transition like your couple did the white granulated sugar and coconut 🥥 milk.??? Any advice🤷🏽‍♀️
    Thank you.

      Hi Salinas! There is no difference between the liquid and granulated sugar measurement. Actually there is, but it is so slight as to be irrelevant. 1oz granulated = 1.3ml liquid sugar. Rice milk will give a different result to coconut, almond , soy etc. They will all condense, but they are different to one another. As long as you got the right result, all will be well. The marriage seems to have been a good one! The couple got on well in the end, after a few rocky moments! I hope this is of help to you.
