    I grew up in the country with fresh milk and cream available. We made butter by putting cream in a medium Tupperware container (tight seal is important) and shaking it. Everyone took turns shaking the container til we had butter. Mom would then separate the butter from the buttermilk and add salt. There's nothing like fresh homemade butter! Yum!

      That is the idea! every home knew ho to do this in times past, we are lucky to have such great dairy availabe even now :)

    I made butter very manually by putting the cream in a small jar and vigorously shaking the jar until I had butter. It took about 20 minutes of shaking. My arm was sore and my hand was numb, and the butter was just butter, but it was still cool :D

      I've done this with children to help them understand how butter is made. They loved shaking the jars and didn't mind how long it took. LOL

      We did this as children in a Mason Quart jar, for my Grandmother, passing it between 3 of us, as our arms tired.
      Probably took 20-30 minutes, but felt like hours.
      We were so excited when the butter ball formed, but n9be of us would eat it - because the grandparents used fresh milk from the cow- I get queezy thinking of it, am Lactose Intolerant - they didn't know such back then.
      ehhhhhh!

    Ugh here we go again with people saying that they'd rather buy butter than buy heavy whipping cream.
    Not all people want that. Some want to learn other alternatives. Maybe in case butter is not available. Or that they want to be in control of the salt. Or for the satisfaction of making it from "scratch." Many people like doing these things for the sake of cooking and being knowledgeable hence the "Bold Baking Basics."

      I agree. Making your own will always be better even just for the absence of preservatives which are present in 99.9% of all food in the supermarkets.
      And it's also fun to say you made it from scratch :D

      You are so right Kim, some people cannot get butter, some people cannot get cream, it depends on where you live! Some people get gorgeous fruits growing in their gardens, some people get cows growing in theirs! It is about a diverse world, we forget that not everyone can go to a store to buy what they want :)

      Kim Aberin We can make butter out of milk cream as well which is available at home as well. Everybody in India makes butter at home

      @@pntravels7514 Idk about where you are, but here in northern Wisconsin it's 3.99 for a cheap 4 pack of butter ON sale, and the caron of cream is like maybe 2.50 ish, way cheaper to make it here lol

    I once accidentally made butter and it was soooo good. So now whenever I bake my own baguette or German pretzels, I make my own butter to enjoy them with.

    Love how simple it is to make butter! I prefer unsalted butter instead of salted because that way I can manage the amount of salt I'm using while making the recipe!

    I remember doing this by accident when I left my (supposed to be whipped cream)In my stand mixer for too long and I was like OMG I CREATED BUTTER !!!

      All my years, I've never known I accidentally made butter that way in my late teens. I thought it went bad. I'm kicking myself now! Eh, live and learn. Time to make butter on purpose! Happy baking!

    u can also put the cream into a jar and just shake the cream until it turns to butter. Your the coolest

    Gemma, I love your videos. I must admit I'm amazed that this one has taken so many people by surprise! I am from Ireland too, and my mother grew up on a farm in West Cork. One of her childhood chores was to make butter in a churn. I've been aware since I was three or four that if you skim off the cream of the milk and just churn it for hours and hours, butter will eventually emerge. I thought everybody knew this. The food processor just makes it much easier.

    I just tried this with fresh diary cream and it worked!! The whipping with a stand mixer took a lot longer than 4-6 minutes but I still did it!! Thank you!

    This is awesome! The cold water is genius! My stand mixer was going and going. I searched for making butter and your video popped into the search results. I added the cold water and, YAY butter. The lovely thing about butter is it can be frozen. Now, I can make a large batch and freeze in divided portions. Thank you!

    I do however recommend if your using a stand mixer to stop and scratch down your sides otherwise it'll just keep whipping up and not separate.

    thanks for sharing! your explanations were the best on the tube (well, the best from about 10 I had the patience to watch :-D)
    I think i'm never buying butter again
    I used 450 ml of 38% cream, and I got 250 gr of wonderfully yellow and deliciously creamy butter!
    I also use a hand-held mixer and it worked just fine. It is a bit slower (the whole thing, including the beating after adding the water) took about 12 min. the process is also a bit less obvious, and the different stages take a few tries until you start recognizing when to do what.
    oh! and since you don't have a lid, when the liquids start coming out of the butter they also start flying around the whole kitchen 😀😀
    well worth the time!!

    So adding that bit of water in the process doesn't affect the buttermilk in any weird way in recipes? just wondering :) great video...i might do this... i wonder what's more cost effective. .

    Hi Gemma, i tried it yesterday using whipping cream. I use hand blender with a whisker. It took me more then 10 mins. I sieve it and squish it the same way. I got butter. It was so yummy. My kids got toasted bread to try it with. And they ended up licking it with fingers. Thank u.

    Can't wait to try this! Just a quick question, I couldn't tell from the video if you used the metal blade of the food processor. I have the metal blade plus another plastic blade that can be used for whipping things or making up a batter. Does it matter which one I use? Thanks for this wonderful video!

      It shouldn't matter, but whipping would be best if you see a difference in tool.

    Thank you for posting this, Gemma! I wish I had known years ago how easy it is to make butter at home. We had company for breakfast this morning and I made grain and nut pancakes using the buttermilk and served them with, of course, the homemade butter. It was definitely a hit and I will be making this over and over.

    Hi Gemma Just watched this vid for the umpteenth time. I laughed at the comment where you say it'll last for eight weeks. More like 10 minutes with a fresh baked loaf or scones!!!       You make cream from milk,,, !!!! Omg sorry you are wrong on this, you can definitely make butter from milk, as that is the first step... making it with cream is just a easy way, a shortcut.....
      U need to bring full fat milk to the boil and let it cool then skim your cream off the top, then you can use this cream (once u have enough as it will take along time and a fair amount of milk..) to make your butter using the process in this video.

      @@biggerbolderbaking actually we can make butter from milk but we need first to make yogurt and then we can make butter and butter milk out of yogurt. This is how my mother do it.

    Gemma, Can i use full cream milk instead of heavy whipping cream?

      Unfortunately, no. You will need whipping cream, a fresh dairy cream with at least 35% fat content to make this one. A full cream milk does not have enough fat.

    I'm so glad I found your channel at our house we go through butter. Danish creamery, kerrygold(my new favorite) and land o lakes are the only brands ill buy but it can get expensive. So I'm glad I found you I can now make as much butter as we need. Thank you so much.

    can you teach us the traditional way of making butter cause i heard that you can also change it in to margerine which I use all the time in my baking

      Just dont add the salt, and you have unsalted butter/margarine.

      margerine used in any buttercream or cake or sugar cookie will give you better results , fermer results and richer flavor , and moist cake

      Please note that margarine is EXTREMELY unhealthy (the real color is actually grey. They color it to have a more "appetizing look"). I guess it's okay to use every once in a while, and yes it is good for former results, but it is really unhealthy for you and should not be used for everyday use (or never is better!).     I remember making home made butter in a baby food jar in 5th grade. It was really satisfying. I shook the jar till it felt like my arm was going to fall off lol.

      And that's nothing to brag about. Indian household makes butter with cream retained from full cream cows/buffalo milk which has been passed down since centuries from their ancestors they don't even call it butter,, my granny who still lives in India does it all the time but let's not forget every country has it's own way of making products at home that has been passed down to them. I was born and raised in South Africa and have seen many different cultures do it from brewing their own beer, baking breads, to culturing cheese and many other delicacies at home in their own way. Your country is no different but it's not biggie, because every country does it in they own way.

    BUTTER makes everything better! Omg....I want to make butter now. So simple and easy. I made homemade butter in grade school by shaking a jar of cream...so fun, but it took 24 of us 6 year olds and since it’s just me, I’ll use the food processor. Omg...YUM! Thank you!

      I know you can make a whipped cream with coconut milk. Put the can in the fridge so the liquid separates from the solids and whip the snot out of the solids. I've never done it, but I hear it's tasty, especially if you like coconut.

      Nice to have personal choices, isn't it? Sometimes it's good to know more than way and have a little adventures in trying new things. On the other hand, you can just go to the store, if you want to.

      There's a great book called Buy the Butter, Bake the Bread. The focus is using food costs to help determine what's practical. The cost of a pint of heavy cream is roughly the same as a pound of butter but only yields half the amount. So it might not be reasonable for many people. Still, a fun treat for special occasions or a great project with kids. We let them make butter in mason jars at the holidays, they love it!

      Perfect Day I'm lucky to be in California where truly organic butter is readily available. Still, the taste of fresh butter is out of this world! Reminds me of my childhood when we made it all the time.

    Many thanks for the recipe. Made it the other day but I shook the whipping cream in a glas with lid and it worked perfectly. When I got the butter I asked my little 2 years old man whether he wants to try the buttermilk as he ususally likes buttermilk. What a surprise, he drank all of the buttermilk and even asked for more. So I guess I will no longer by butter but whipping cream and make our own butter. :-)

    Growing up we lived on a farm, had fresh milk and cream. When mom wanted to make butter, each of us in the family took a turn to shake the airtight container of cream for a few minutes til we had butter. Great memories, and very delicious butter😋
