Hi Bold Bakers! Thank you for joining me for my video premiere on how to make evaporated milk at home. It's really easy so I hope you give it a go. After this video, go check out the written recipe on my website: bit.ly/EvapMilk and let me know how you get on! :)
Even though I have been cooking for more than 40 years, baking from scratch and making candy since I was five years old, and voraciously read about ingredients and cooking, you have no idea how valuable this video series is for the amateur cook! Thank you, and I look forward to more of these basic videos. :)
If you visit the coffeeshops of singapore & malaysia, we call it kopi-C (literally pronounced as kopi-see) for coffee with evaporated milk.. or teh-C for tea with evaporated milk.
Wow! So simple. We spent an hour searching apps for local supermarkets trying to find evaporated milk that was unadulterated (with added synthetic vitamins or carrageenan) without success. Now we find this. Thank you!
Falls here and I need to make pumpkin pie, but I don't have evaporated milk and I don't feel like fighting people in the grocery store for a can. As I was thinking that, this video popped up. Thank you Gemma
I just came here searching for evaporated milk recipe... am a beginner baker myself... but loved the way you explained the things.. and volaaa... you got a new subsriber
Thanks for the vid! We live just down the road from a dairy where they sell commercially and also to the public, the milk is delicious and wow what great evaporated milk it makes! I never have to worry about not having evap around for baking anymore!
Thanks for this, Gemma! We have different kinds of evaporated milk back home but it’s very difficult to find here in Japan. Now I can try doing this. 😊
@@iwantjolynetoORAORAme if you have a Donki near you or a Gyomu Super, you can try finding condensed cream in can. Unfortunately both are really far from where I live (in a resort) so if I don't have any I just try to make using Gemma's instructions.

Where I currently live, evaporated milk is about 5 euros a can but a litre of fresh milk is 1.20 euros. Thanks so much Gemma, I am defo gonna give this recipe a go! x
Hi Gemma ☺ The evaporated milk is an useful ingredient to make different recipes. It's so good and here in Italy I can't find it. Thank you so much for your recipe, Gemma. Good night. Here in Italy it's 9:30 pm.😚😚😚
Thank you for this recipe! I can't believe how easy this looks! I am severely lactose intolerant and have been searching for a lactose-free condensed milk (I know I saw one somewhere!) but now I can just make it with the lactose-free milk I usually buy!
Great recipe to have! These bold basics are so wonderful to have. Not only can you control your ingredients, but I'm sure that in making your own, you will save money in the long run.
Ty so much.. for telling difference between evaporated and condensed milk as loads of videos showed condensed milk in the name of evaporated milk.. i was asked to use condensed milk and evaporated milk in one recp.. so got little confused with other recp.. but i was sure you must have a clear and true recp.. ty so much
Well Duh! I never really thought of what evaporated milk was. I use it in my coffee, and in some baking. Thank you for the recipe. It's convenient and much cheaper!😊
Hi Gemma, thank you for explaining the difference between condensed milk and evaporated milk. I am a bit afraid to try this recipe for evaporated milk as I often have a bit of trouble when it comes to dealing with boiling things on the stove top. But this is not water so it should not be boiling LOL I guess I will just have to apply the rule# always listen to Gemma and things will be fine! You haven't steered me wrong and I've made things I never thought I could😊❤
the film layer on the milk is called nata in portugues. It's basically like a very soft sweet butter. Put that on toast with some coffee and thank me later!

It helps when making things on your own since most of the time we can't. Find exotic ingredients or they are very expensive but then I as a home chef turn to stuff that I can find in my house or source the ingredients locally knowing how to turn daily items into Lavish store brought ingredients help thanks a lot
Hi Gemma, Do you need to stir frequently during the early process of boiling the milk. Can I used Milk Powder as replacement and what is the ratio. Thank you in advance.
You just need to stir occasionally to make sure that the milk doesn't burn at the bottom. Hm. I do not know if you can use powdered milk here. But you can try and experiment and report back
Gemma, awesome recipe for substituting this quite uncommon (in my place) ingredient! Was wondering, where is the chocolate rice pudding recipe you were raving about? Looks really decadent but cant seem to find it on your website...
Hey gemma.. i have to say i love you first.. I tried the orange chocolate cake nd carrot cake nd both beyond amazing.. tmw i will make the ( the vanilla birthday cake with sprinkles) so according to the substitute for the eggs I choose yogurt but one egg = 4 tb of yogurt what about only white ?? Should i go half of it ( like 2 tb for yolk 2 tb for white ) ??? Thank you 🙏🏻
