Hi. The older I become, the more I believe the statement that "grandma knows best". 😊 Thank you for sharing and for the positive comment. Aside from being fresher, the taste is certainly better than canned. I hope you have a good experience in making your own. Good luck and happy baking! Thanks again.
I agree, and I have a theory. Just turned 69, and remember as a kid that the evaporated milk tasted richer than it does today. Make your own. It's important for making the standard pumpkin pie recipe. I've made evaporated milk using Nido, whole dried milk, just use twice the directed amount of dried milk; It tastes great. Unfortunately, same goes for the canned pumpkin. the canned pumpkin doesn't have that same olfactory which is necessary for the pumpkiny pie taste. Cook your own pumpkin in the oven, and don't use sugar pumpkins, they don't have the olfactory either. Just a nice dark orange colored little pumpkin, happy pumpkiny smell.
Yes, in general, I think once you taste homemade, quality ingredients or food, it's hard to go back. Store-bought just doesn't cut it. If time is an issue, it just needs to be a priority. Thanks for commenting and sharing.
I would think that you could make a large batch and can it in 12 oz portions for later use. This would be helpful during the holidays. I don't have much experience with canning, so I am not sure.
Hi. That's a great question. Like you, I don't have that experience, maybe someone in the know can chime in here. I totally agree that having it readily available during the ho!idays or anytime really would be beneficial. Thanks for the suggestion and commenting.
Hi. Since you're using fresh milk, you can store it in the fridge for up to 4-5 days. However, if you need to preserve it longer to use in a recipe, you can freeze it for up to 4-5 months. The downside is that the thawed milk might separate some, but it still works fine in a recipe. I hope this helps.
And if you want condensed milk, evaporate de evaporated milk with sugar. Then if you want dulce de leche, a water bath with the condensed milk for a few hours.
The condense milk is different from evaporated milk: you probably meant to say it’s evaporated milk but that’s not condense milk, the condense milk is thicker
Hi. Yes, this video and linked blog are only on evaporated milk which is regular milk heated so that much of the moisture has been evaporated. It is not the sweetened condensed version that has added sugar.
my grandma wants me to stop using cans and im so happy to see someone else agree! thanks for your video!
