Even my mum laughed at that. XD

This recipe was perfect, if you don’t have the thermometer , just let the mix bubble for 12-15 minutes until it thickens
Rabbit086 I was looking for someone like u to help me out holy crap
This comment is underrated 😳
low heat?
how would I know when to stop?
What flame
Love your Bold Basics videos Gemma!!
A tip for people making this is when your syrup has made it to soft Ball stage don't wait like she did unless you really can whip up your egg whites like there's no tomorrow, I used a hand mixer and it took more than 10 minutes but she didnt warn that you can't reheat and that once it's ready it's pretty much go time. So I would recommend doing your egg whites first then pouring it into your mixer. Mine still came out tasty but not as fluffy as I would of wanted. :)
I totally agree with you on this. Mix the 3 egg whites and its co-ingredients in your electric mixer first, because these won't get "overcooked" even when you're setting these aside, so you can start simmering your sugar mixture in the saucepan.
Right? Even though I haven’t tried this recipe, just by watching the video i was already wondering if it would make more sense to whip the egg whites first before making the syrup
For people who love their s'mores but can't do marshmallows because of the gelatin, fluff is the way to go! Yay for a recipe I can do at home!

Dear Gemma
I love watching your videoes, you always have the answers to all those basic questions I always had! thank you!!
I have a question: how long does the fluff keep for, and do I have to refrigerat it?
Good question
In my country we also didn't have any local marshmallow fluff brand, and the imported ones are always too expensive :( So thank you so much for this, Gemma! :)
I'm delighted you liked this recipe :)

I just made this and it turned out great 💞
Big fan of your videos. Good clear, easy instruction along with practical help tips and your Irish accent plus easy style make for an enjoyable watch! Thank you so much. I was just needing this recipe! So happy to find it on your site.
I’m delighted to hear that, Sue. Thank you for giving my recipe a go.
I have a potentially very silly question: If you're not allowed to put a spoon or spatula in to the mix at all, why are you allowed to put the thermometer in? What is it about the thermometer that won't crack the mixture, when the spatula would?
I was wondering the same thing!
That's actually a good question! I've never thought of that before. I hope someone has an answer :)
Because she puts the thermometer before it starts to simmer and she doesn't stir with it. It's completely stationary. If she would keep moving the thermometer around it would crack the mixture.
Ahh okay, that would make sense! I assume when she lifts it out after it's off the heat, it won't crack then as its off the heat? :)
+Andrew Smylie I normally take it out after its off the heat. But it's more about the stirring motion. Just don't stir
hi gemma i want to ask you what can i do instead of corn syrup and tartar cream because our region don't have it at all thank you
The corn syrup is easily replicated with sugar syrup, which is taken to the soft ball stage. cream of tartar is an acid, in baking terms. it is a bi-product of wine production. Lemon juice will replicate this. If you are an experienced baker you will be able to do this, if not you will need to learn each separate stage first. Do a little research online, i intend to cover this in basics soon enough. :)
Gemma Stafford what did you use to check the boiling syrup?
+Stephanie Solomon it's a candy thermometer:)
will definitely make this!!
i love it gemma...tq for upload it..its really helpful
"ask an adult to help you"
I am an adult!..... at Pizza Ranch...
Is it possible to replace the corn syrup?? For glucose maybe?? I really can't find it anywhere and I really want to make this recipe!!!
Yes, that will work too :)
+Gemma Stafford thank you sooo much!! I will be making this recipe ASAP!!!! Love from Perú ❤️❤️❤️🇵🇪
+Gemma Stafford can you make heavy whip cream on the next basics? :)
If I'm not mistaken, you can replace it with a bit of lemon juice.
Under the assumption that Gemma's making caramel in the first step, the corn syrup is basically there to prevent sugar crystals from forming.
A bit of lemon juice (to lower the pH of the caramel) does just that.
That being said, corn syrup will give you more of a shiny, glossy texture compared to corn syrup so keep that in mind.
I've never made these cause I don't have a mixer so idk whether it'll affect the end product.
+Lucia Vargas OMG UR PHOTO. ITS THOMAAAAS
I love that you included the ingredients and their measurements! Soooo helpful!!! Thank you! ❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️❤️
Thank you for watching Daisy, I'm delighted you liked it :)
+Gemma Stafford you're welcome! I love watching your videos!
Love this!!
When you stop revising to watch this video real quick 😂😅
that means your awesome! but school is important so back at it :)
Lool yes ma'am
this is very similar to an Italian meringue
that's what I thought since Marhsmallow usually has some kind of setting agent in it like gelatine.
Brissy Girl I guess the agent here is the corn syrup
+Brissy Girl Marshmallow fluff doesn't use a setting agent, as it doesn't need to be kept in a shape, so it isn't important like it is in a regular marshmallow x
I luv this!
thank you for the recipe! just try it today..and it's wonderful!
Well done Raphelia!
l am not gonna make this because I would eat the whole bowl...
samee😂
+Leya_ gurl Me too! So deliciously dangerous.
+Leya_ gurl I know soooo good 😂
Lol
It's hard not to! :)
Gemma, recently I went to my friends's mom friend's bday party and there was mud pudding. I thought my friend could eat it but they said it had eggs and she's allergic to them. I want to make a homemade pudding WITHOUT eggs so she could eat some with me. Thanks for reading again
I'm allergic to eggs too. Gemma you should make a series of eggless recipes :)
I will add your suggestion to my list. Check out my website (biggerbolderbaking.com) for all of my recipes with egg-free options. Hope this helps :)
Thanks so much! She loves cooking but when she saw your no-bake strawberry cheesecake recipe, she was amazed.
I love this! I better get all my ingredients and start baking this deliciousness!!
Let me know how your marshmallow fluff turns out :)
Yummy...thank you for making a Marshmallow recipe since I love marshmallow soo much. Love your video.😀😀
Thats just merangue !
Can you use maple syrup instead of corn syrup?
On her website she writes the following: "Replacing Corn Syrup: Golden syrup would work but just know it will turn your fluff a darker color. It won't come out white. You can also use glucose syrup."
or honey? I can't get maple/corn syrup where I live
+Loli I think the flavours would be too strong. Can you get glucose syrup?
Or just buy online
Unfortunately I live in Argentina and they have really strong customs regulations and dont let you get anything in.. But I can get glucose syrup! Thank you
No! It's like with any candy you should stick to the mix
This looks amazingggg! Thank you for sharing this recipe Gemma! Definitely need to give this one a try!
Go for it! Here's the recipe www.biggerbolderbaking.com/homemade-marshmallow-fluff/
gr8 i will give it a try i love marshmellow fluff and its also brilliant for makimg marshmellow fondant saved me from having to buy lots of bags of marshmallows and having to separate white from pink ones ending up with loads of pink marshmellows that I don't need thank you gemma
In Italy is called "Meringa" and it'so yummy!😉 (I'm italian)
e la puoi fare con lo sciroppo di zucchero XD
I don't think it's the same thing. I'm Greek and what you have in mind we call it "marega" and it's just egg woks😊❤
So, you are Greek, but you think you can decide what's something in another country? Why don't you go and use Google and search "meringa italiana"? Please, educate yourself and then comment on youtube. That's just good advice in general, but stil...
+Bougie I'm Greek too and she said that she doesn't think it's the same thing that we have
+Bougie read the comment slowly before you start to hate on it
What if we don't have the thermometer?
Get a small bowl of cold water, and drop a little bit of the sugar mixture in it, and if it can form a soft ball, then it's done
stick your finger in quickly. If your finger comes out nice and crispy, you did it right.
+Rumplelumpa Snickerdoodles Hahah nice one. You made my day.
You need to have one to reach the right temperature. They are not expensive and most grocery stores sell them.
I put a link on my website of where you can buy a thermometer. www.biggerbolderbaking.com/homemade-marshmallow-fluff/ . Hope this helps :)
Your videos are always so relaxing to watch, I really like how calm you talk us through every step, so it's easy to understand. Sometimes I just watch your videos for comfort, since I like them so much :D

Thank you so much. I really appreciate it :)
I have been dying to get my hands on this recipe. thank you so much for sharing such an easy method. can't wait to try it.
Thanks for tuning in! I'm delighted you liked this recipe :)
can i use honey instead of corn syrup?
Golden syrup or Glucose syrup would work instead of corn syrup but just know golden syrup it will turn your fluff a darker color. It won't come out white. I put a link on my website of where you can buy corn syrup. Honey or apple maple syrup will not work as a substitute.
Ok thanks ;)
That's Italian meringue, not marshmallow fluff.
That’s what I thought!
If you add gelatine, then that would make marshmallows
Yyyyyuuuuuummmmmm! I love marshmallow fluff!
Yes! This is my favorite frosting to use 😊😊
Wow !!! Love it❤❤❤
Dont eggs give u salmanela
This is not true Emily, eggs in most places are perfectly safe, we do not even think about this here in the US, where eggs are certified as fresh :)
Gemma Stafford really? I never ever eat eat raw eggs...
The hot sugar mixture cooks the eggs...
It won't cook the eggs because the eggs were beaten up. And it's safe to eat raw eggs.
Thank you so much Gemma for sharing this video with us
Thanks for tuning in :)
