      Nadun Appu I can’t confirm for all milks, but it does work with cow milk, including Lactose free milk, and almond milk. It mostly is dependent on the sugar since the sugar is what helps it thicken instead of evaporating.

      I used almond milk and it turned out super good thick and creamy, I added 1 teaspoon of guar guar gum and 1 tablespoon of arrowroot.

    I’m making this today just to pour in a cup of coffee. I’ve halved the recipe: 1 cup of milk + 1/3 cup of sugar. It’s currently simmering and has about 10-15 minutes left. It smells amazing! 😍
    Update: Oh my God, Gemma! That’s the best thing I have ever put in my coffee in all my life. Used full fat, organic milk and good quality sugar. Thank you!

(forgetting all I need is milk and sugar..LOL) When I made it I was so astonished. It was very easy and very tasty. This is excellent. This was also my first time trying it, actually, my first time trying to make any kind of dessert except for a cake/brownie out of the box. I'm trying to make a dessert that calls for sweetened condensed milk, and of course I don't have any.
    The one thing I would want to add to Gemma's advice; if you have a flat-top stove make sure your pan sits flat and not able to wobble around as mine did. I was so tempted to stir the milk because the simmer point in my pan was restricted to a very small area while the rest of the milk was not at a small simmer. By the time I noticed that was happening it was too late to switch pans. I never noticed how some of my pots and pans weren't totally flat until I got that stove. :)

    Hi Gemma!
    I wanted to ask 2 questions and I would be pleased if you could answer them.
    1.What happens if the milk starts to boil (for about 7minutes), but you put it to a simmer?
    2. How long can it simmer for? Is 40 minutes the maximum? Or it can boil longer? Because mine has been simmering for 50 mins and it is still liquidy and whitish :/
    THANK YOU!

    thank you so much for this....this really saved my life during quarantine I really wanted to make the chocolate truffles but I needed condensed milk I go to every different store I still have no condensed milk...so I thought maybe I should make condensed milk by my self so I searched through youtube and I found you're channel...it was really easy to make only 2 ingredients....and it really worked it really needs some few hours to make this but waiting for 3 hours just to make this is so great I and it was a success I am so proud of my self...once again thank you so much..but the color is like white yellow or mostly white but it turned out thick in 3 hours and it was so sweet like a real condensed milk...

    This was excellent! And I recommended to my friends too. In fact this was much better than the store bought ones. My only concern is the texture was slightly like curd and not very smooth. What do you think could be the reason?
    Thanks.

    • @faithfullyhumble
      @faithfullyhumble 3 года назад +1

      I've seen other videos that say to constantly stir if the heat is too high as it'll curd at the bottom up. Could also be that the milk is going sour. Sour milk will turn solid when heated.

      Just take some normal liquid cream and mix it with a robot until it looks like whipped cream, you can also add some vanilla extract or some vanilla sugar. its really easy but it takes a bit of time if you dont have a robot

    • @biggerbolderbaking
      @biggerbolderbaking  5 лет назад +3

      Good question! Did your milk get to a gentle simmer? It is inevitable that this milk will condense given the right ingredients and the correct temperature. Confidence seems to help too.
      If the temperature is too low then that will not happen.

    well you can use regular sugar in ice cream from my experience, but you also have to use a substitute for condensed milk by taking 1 tbl spoon of milk powder and 3 tbl spoon of water.i made vanilla ice cram this way and it came out just perfect! it was creamy,not too sweet and tasted amazing! so if you dont have condensed milk you can also make ice cream this way.hope this helped :)
