Killer recipe. :) I only visited England once, but have loved it ever since. Back then, there was Steak and Kidney pie, and nothing else. (Yes, I'm that old.) :) I was forever asking if a restaurant could make steak pie (which I love) without the kidneys? Their response was more colorful than I should write here, but finished with "crazy, little yank." LOL ;) I tried! So glad that someone made this beloved pie for those of us who hate any kind of gizzard/liver. Our hero is Jamie Oliver!

Can you freeze this after cooking or best to do it with fresh puff pastry and freeze.
This was great!! I did it for a crowd and doubled it and baked it in a 14" cast iron skillet. Wonderful dish.

I made this today and it was great! I was scared at first, being inexperienced. I had this type of pie before at a pub here in Florida owned by an expat Brit, but I'm going to make it myself from now on!
just bought a guinness pie dish with crimper and pastry brush and chopping board in the post christmas sales and looking forward to making this with a nice portion of oysters cant wait.

I make this pretty often as a stew. I really enjoy it and it makes great leftovers.
This was really useful, I did this tonight (without cheese and with another stout beer) and turned out great.

What a lovely idea for a pie. Always interesting when you can infuse unique flavors like Guinness into a recipe.
OMG, this recipe is great! The meat softens in an incredible way and it just melts in your mouth will eating it! The combination between mushrooms, celery and carots weds in a wonderful way the flavours of the meat and beer. Fantastic! The only thing I might change is rosemary, because I did not felt it very nice with beef, maybe I will try next time to replace it with a tea spoon of grounded cumin. Again, fantastic!
That crust and the filling when onto the plate... Beautiful!

Akif anything like lager beer or something with a lot of hops works.
It mimics a very smoky flavor which is quite nice.
A pie like that especially when the spoon was going through the puff pastry on a cold Winter night with great red wine. What could be better?
A good ipa mate
made this today! tastes delicious, just a couple of things i did though, i blind baked the base first for about 25 mins so its not completely cooked but still cooked enough (it will finish crisping up when the whole thing is cooked). i also used a beef stock, however if using a beef stock i would hold back on the cheese a little as it will become a bit too rich! otherwise it was a delicious pie!

@Ralph Macchiato sorry, but after 1h of cooking there is still over 50% of alcohol in there. i got this from three different sources now. and as long as the kids are small ...

I made this at my friends dorm. It took 5-6 hours and we ordered blt's from 5 guys while waiting so we didn't strave.
It was one of the best things i had eaten in months.
Looks good apart from i would get some colour and caramelisation on the beef first for extra flavour
@jamie, why did you not sear the meat 1st?
For me personally, any stew without a sear is just wrong. Realizing taste is objective, just curious if there is more to it than meets the eye?
Because its brisket!! Its going to break down into stands, similar to pulled pork!... you only need to sear meat if its going to retain its shape in the pie at the end! He uses a similar technique for his cowboy chili which is amazing by the way!
There's not much point in searing meat pieces that size
I agree searing the meat caramelizes and gives extra flavour. I would do it on most stews. But in honesty this is a very quick simple stew with bold flavours from the Guinness. I would add a bit of beef stock or cube also. I'm sure the pie is delicious without searing the meat anyway

Just replace the alcohol with beef stock as you do need the liquid for the gravy in the pie. We make lots of variations of this pie in the UK - steak on it's own, steak with just mushrooms, steak and kidney, steak and potato. You can even add a dash of soy sauce or a dash of oyster sauce or if you can get it where you live some Worcestershire Sauce to your pie, it will give a bit of extra flavour when not using alcohol. Have fun experimenting.

Fahrenheit isnt used, pints are only really used for ales and milk. pounds is used sometimes, in older recipes mainly.
60°C but as someone else has already commented all the alcohol does not boil away. Simply because it gets trapped in any organic mater and is unable to escape. If you just boiled wine at around 60° then you could probably extract all of the alcohol due to the fact that its got nowhere to get trapped.

I LUUUUUUUURVE this recipe. we follow a strict diet where we do not eat
anything with deep thoughts and emotions so obviously beef was out of the question . We used prawns instead, we were out of beer so made a roux and
added some cheese which worked well, didnt bother with much veg as didnt
want to overcomplicate it but did serve with a green pepper that i cut
into cool shapes. left out the pastry aswell as i had already eaten some
chips for lunch lol.

hey RuneAlstars, just to correct this, after 1h of simmering there is still 25% of the original alcoohl see e.g. wikipedia "cooking with alcohol", so if you cook for small kids or persons susceptible to alcoohol (e.g. ex alcoholics) dont use ingredients with alcohol.
i use e.g. a spoonful of wine to get the taste, but not a whole can of beer - but thanks for replying!

The puff pastry really does add an extra dimension to it.
Great recipe, little hard work that goes a long way to pleasing the family, but guinness was hard to find (in Sardinia) so beer and squid ink,done the trick.filo is also a must try!!

ethanol starts to cook at 78,32 °C but ingredients like salt alter that and rise the boiling point. If jamie cooks it with a lid on even after 2 hours there could be about 25% of the alcohol left and after baking about 3-4%, so be carefull as studies showed that after cooking the alcohol could vary from nearly 0 to 80% of its original value.

Wish this was in your current app.
Even though most of the alcohol burns off, some still remains. According to a study, in 2.5 hours of baking, 5% of the alcohol won't evaporate. It may be a little, but for someone allergic to alcohol, we can't say that this is a non alcoholic dish.
i don't recommend puff pastry at home , its very hard to make >.
