I am from Ireland and from my Irish school home economics book Irish Stew is made with lamb, potatoes, onions, pepper and salt, water and chopped parsley.
I would definitely say the title is misleading. Most "traditional" recipes don't include a lot of ingredients because they were hard to come by or expensive and tend to be rather bland. This is definitely a modified version but still follows the concept
as soon as you see “add broth” - it’s from the US. They think everything Irish comes with Guinness, afraid to think of what a Russian stew would look like…? ;)))

My mother would put potatoes directly in the stew mix, and whole onions since my older brother for some reason said he really dislike the texture of onions. I still do the whole onions today (last week in fact) . Since leaving Ireland 30 years ago and now living in San Diego if I want a good Irish stew I have to make it myself.
Same about the onions. My mom would put six whole onions in so the rest of us had at least half. I still prefer the texture of the onion half. Also, our parents let us drink half a stout each at dinner. Big kids got more.

I made this today. Hands down the best beef stew I've ever had. It is now my go-to beef stew recipe. I more or less do the same thing but never added a Guinness beer before now. It adds an incredible richness and depth of flavor that simple beef broth will never give it. You must try this.

I did this recipe and it was AMAZING. I did do one mistake, I didn’t brown the meat correctly, put too much at one time and made too much juice, which of course I used. Even with me screwing up, it was a hit. Thank you for sharing!!

Fixing the technique for an even better taste. Bacon first. Remove the bacon and fry the meat in the remaining fat. Remove the meat and put the Mirepoix in the following order. Onion (half time), carrot (half time) and celery ( 1/4 time). Only after preparing the mirepoix put the garlic. Make the ROUX in a separate pan. Get it out of your head that adding flour and the fat in the total pan is good. Make the roux always separated in the exact amount and you will see that the taste is totally perfect. Add the roux. Make the tomato brown in a separate pan using water so it doesn't burn. Only then add the already brown tomato. The taste and color will be perfect. Then everything remains the same.
One thing I like to do in order to make things a bit easier is to cook the beef at the start as big "steaks" (in my area, beef chuck is sold in roasts at least 2 inches thick, so I cut them thinner for this) so it's really well browned on both sides. When you take it out, you can let it rest before cutting it into smaller cubes and adding it back in later. I find it a bit annoying to turn and remove all those little pieces individually, and you're really only getting good browning on two sides anyway. The end result is about the same. Beef stews are my favorite food, I make them a lot =)
Fantastic video. This is how my Irish mam made stew. She might have popped in a few drops of Worcester sauce when there was no Guiness to hand. If there were small potatoes available she often threw them in the last half hour to make the stew go further. It was great the next day too! Many thanks for the memories. Lecker indeed!
its not a traditional Irish stew.. no where near it.. despite what this lady think, we do NOT USE PASTA, let alone pasta sauce, nor stock, to make the stew... and as for diced onions.. seriously.. this lady knows how to cook an Irish stew as much as I know how to speak Chinese backwards..
Mrs. Sophia, very delicious recipe, Irish stew is very regional with the ingredients in Ireland & here in U.S. , not sure what cut of beef you used but our family here & there uses diced chuck roast chunks. The ingredients are almost the same as yours, but we do not use pasta , we use a lot of diced potatoes, turnips ,& garden peas. We use beef stock instead of broth , worstcheshire sauce, & after all the simmering we use a corn starch slurry brought to a boil to thicken up for beef gravy instead of flour..we like whole fat cottage cheese & Irish soda bread buttered for sides. I like Guinness to drink but is it is to heavy & strong for my wife.God Bless you , your husband , your new little man & the rest of your family/friends

Thank you for the reminder coming into winter for Irish Guinness Stew but I must point out that this dish only has potatoes. We always put them into casserole for whatever time it takes to cook them. Or bake them in silver foil and butter an hour before casserole is finished. Deeelishious x

Hello Sophie, you have once again made a very delicious meal. One of the reasons I like your channel so much is because you make the process of preparing a meal so simple. I have always considered cooking a chore. After watching your videos I see it more as a gift of giving, maybe even a labor of love. I still don't have the patience to cook a lot of the dishes you prepare for us. I still fall back to simple meals. It's just for me and so I don't see a reason to go all out. This being said I am wondering if you might address (in future videos) recipes that get us single guys out of our comfort zone and fix better food for ourself? I do love left overs so this should be a simple transition for me, but I keep falling back into making a simple meal. Any suggestions? any dishes that are so simple a single guy can make it? LOL Simple as in not a lot of time but more than peanut butter and jelly between two slices of white bread. LOL By the way this recipe reminds me of making Beef Bourguignon. Made this for my Irish boyfriend, I added baby potatoes to it , and a side of garlic bread it was top class , got a lot of compliments and it lasted another day which was so yummy next day too , thank you 💋
I will definitely this beef stew recipe! The kids talking in the background, while you are preparing the dish reminds me so much of home. I remember helping my mom while she prepared dinner, my younger brothers in the background just yapping away and watching TV...
Bacon first. Then use the bacon fat to flavor the beef. Then you will get a better fond as well. And always add the garlic right before you deglaze. If you cook the garlic more than a couple minutes over a direct flame it becomes very bitter.

I had beef stew at Gus O'Connor's Pub in Doolin, CO. Clare. Susan O'Connor, seventh generation owner told me to marinate one pound of beef in one pint of Guinness beer. It was some of the best beef stew I've ever had.
I bought that dutch oven after seeing this. I absolutely loved making this and will be making this many more times. I only changed out the pasta for potatoes. Thank you so much for sharing

Add spuds and turnips if you want them, but the nice thing about ladling the stew over small shell pasta is that the shell pasta picks up some of the gravy and holds it in its little well to add more gravy flavor to each pasta bite...imo.

My Belfast granny never cooked pasta with an Irish stew. Potatoes in the stew, yes. Or mashed Potatoes served with stew poured over top. I get it that kids like pasta.....but it ain't Irish.
Nothing wrong with the recipe, and don't want to be one of 'those people', however the meat is not seared properly. The bacon always goes in first and you brown it - here it was essentially boiled. The onion's water content was not reduced in order to release the natural sugars and you should not keep mixing the onion as here it cleans the bottom of the pan. Let that crust build up. The garlic should only be added just a couple of minutes most before you add wet ingredients. The heat needed to be turned right up to allow the Guinness to deglaze the pan and capture the flavours from that increased crust off the bottom. Flour was added but so much liquid was reamaining after the cook, so leave a gap on the lid to allow the liquid to reduce some more. Do this and the depth of flavour increases massively.

Pepper in this case will burn and taste bad. Don't pepper while you roast the meat. Even salting comes later, with a French cooking style. But the Italian mostly salt in every step, so there is no wrong and right The recipe she uses is strong and intensive. Great job 👍🤤

I love your channel but I have to make a stand! I am Irish and if you want to make a 'traditional Irish stew' then there's a few things wrong here. Let me quickly run through them; - we don't use tomato paste - we don't use dried herbs - we don't use Guinness - we don't use flour ...and it's made with potatoes not pasta (come on!). Anyway, it still looks delicious!

Skip the pasta. Chuck some spuds in for the last 30 min 👍. Lovely recipe
Bacon first. Then use the bacon fat to flavor the beef. Then you will get a better fond as well. And always add the garlic right before you deglaze. If you cook the garlic more than a couple minutes over a direct flame it becomes very bitter.
Won't lie: came here for the recipe, but intrigued by the chef in a hot dress who danced to the stove. Yowza!

The pasta surprised me I confess lol, but sure, give it a go anyway! I'd be surely missing my spuds 'n turnips in such a stew though!
Add spuds and turnips if you want them, but the nice thing about ladling the stew over small shell pasta is that the shell pasta picks up some of the gravy and holds it in its little well to add more gravy flavor to each pasta bite...imo.

Это очень вкусно. Очень похоже на традиционный чешский пивной гуляш. Но я бы рекомендовал либо брать бекон не полосками, а целым куском и резать соломкой более толсто, потому что от этих полосочек тонких за 2 часа тушения ничего не останется. Либо, как вариант часть бекона пожарить отдельно до шкварочек, и посыпать их сверху на каждую порцию

My Belfast granny never cooked pasta with an Irish stew. Potatoes in the stew, yes. Or mashed Potatoes served with stew poured over top. I get it that kids like pasta.....but it ain't Irish.

Nothing wrong with the recipe, and don't want to be one of 'those people', however the meat is not seared properly. The bacon always goes in first and you brown it - here it was essentially boiled. The onion's water content was not reduced in order to release the natural sugars and you should not keep mixing the onion as here it cleans the bottom of the pan. Let that crust build up. The garlic should only be added just a couple of minutes most before you add wet ingredients. The heat needed to be turned right up to allow the Guinness to deglaze the pan and capture the flavours from that increased crust off the bottom. Flour was added but so much liquid was reamaining after the cook, so leave a gap on the lid to allow the liquid to reduce some more. Do this and the depth of flavour increases massively.

Even salting comes later, with a French cooking style. But the Italian mostly salt in every step, so there is no wrong and right

I love your channel but I have to make a stand! I am Irish and if you want to make a 'traditional Irish stew' then there's a few things wrong here. Let me quickly run through them;
- we don't use tomato paste
- we don't use dried herbs
- we don't use Guinness
- we don't use flour
...and it's made with potatoes not pasta (come on!).
Anyway, it still looks delicious!
