3가지 맛의 크림으로 층층히 쌓은 크레이프 케이크를 만들었어요~
크림치즈 크림에 베이스에 딸기가루와 코코아파우더를 섞은 크림 2가지를 더 만들어 총 3가지의 크림을 사용했는데 색도 잘 어울리고 다양한 맛을 즐길 수 있어 좋더라구요~
저는 약 20장 정도의 크레이프를 구웠는데 6장씩 총 18장을 사용해 만들었어요~
안에 샌드한 크림을 겉에도 발라 자연스럽게 그라데이션 되도록 아이싱 해 봤어요~
냉장실에 차갑게 굳히면 더 깔끔하게 자를 수 있답니다~

▶재료
달걀 4개
설탕 50g
소금 1g
바닐라익스트랙 3g
박력분 200g
우유 500g
녹인 무염버터 70g
생크림 90g
설탕 20g
크림치즈 110g
생크림 80g
설탕 20g
크림치즈 100g
딸기 가루 4g
생크림 80g
설탕 20g
크림치즈 100g
코코아파우더 10g
▶레시피
1. 차갑지 않은 달걀에 설탕, 소금, 바닐라익스트랙을 넣고 섞고 박력분을 체 쳐 넣고 차갑지 않은 우유 100g을 넣고 섞는다.
2. 남은 우유를 모두 넣고 섞고 녹인 무염버터를 넣고 섞은 뒤 체에 거르고 랩을 씌워 냉장실에서 30분 정도 휴지 시킨다.
3. 약불에 올린 팬에 반죽을 붓고 얇게 펴 굽고 기포가 올라오면 뒤집어 조금 더 구운 뒤 식힌다.
4. 식힌 크레이프를 15cm 틀로 자른다.
5. 차가운 생크림에 설탕을 넣고 휘핑하다가 거품이 올라오기 시작하면 차가운 크림치즈를 넣고 살짝 풀고 휘핑해 크림을 만든다.
6. 딸기 크림은 크림치즈를 넣고 딸기가루를 넣고 섞고 초코 크림은 크림치즈를 넣고 코코아파우더를 체 쳐 넣고 섞어 만든다.
7. 크레이프 한장에 초코 크림을 바르고 다른 크레이프를 올려 반복해 6장을 쌓는다.
8. 딸기 크림을 발라 6장을 쌓고 흰 크림을 발라 6장을 쌓은 뒤 옆면에 초코, 딸기, 흰 크림 순으로 바르고 그라데이션 되도록 아이싱한다.
9. 윗면을 정리하고 슈가파우더를 뿌려 마무리한다.

80g Heavy cream

10g Cocoa powder

amazing work on the frosting! when i saw the thumbnail, i didn't even think it was a crepe cake until i saw the title. it's so smooth, and i can tell by your simplistic ingredients that the neapolitan flavors in this recipe actually compliment each other, unlike other cakes and cupcakes which have store-bought frosting and are made with too many added ingredients. i can't wait to try this out once i get my strawberry powder in the mail. you have earned yourself another subscriber!

오늘 만들어봤습니다. 쿠킹트리님 좋은 레시피 정말 감사합니다. 전 베이킹을 안 해본 기초가 없는 사람인데 (치아바타만 만들어봄) 어려운 점은 크림을 동영상 처럼 곱게 만드는 것이였어요. 크림치즈가 생각 만큼 안풀리더라구요.. 전 좀 뭉친 크림으로 만들긴 했지만 맛은 좋았습니다. 쿠킹트리님 덕분에 즐거운 주말 보냈습니다 :)
