블루베리와 딸기를 퓌레로 만들어 듬뿍 넣은 노오븐 치즈케이크를 만들었어요~
베리를 많이 넣어 치즈 케이크의 색도 예쁘고 과일의 맛을 충분히 느낄 수 있어 좋더라구요~
평평하게 굳혀도 좋지만 물결 무늬로 모양을 내 굳혀 봤는데 귀엽고 봄 느낌도 나는 것 같아요~
깔끔한 색감을 원하시면 퓌레를 믹서에 갈아 치즈케이크에 섞어 만드시면 된답니다~
저는 과육이 콕콕 박혀 있는게 먹음직스러워 보여서 갈지 않고 사용했어요~
다른 장식 없이도 포인트가 되는 치즈케이크 인 것 같아요~

▶틀 사이즈 Mold size : 15cm x 7cm
▶재료
냉동 딸기 150g
설탕 35g
레몬즙 4g
냉동 블루베리 65g
설탕 30g
레몬즙 3g
부순 다이제 쿠키 80g
녹인 무염버터 40g
크림치즈 120g
젤라틴 3g
생크림 60g
블루베리 퓌레 50g
크림치즈 120g
설탕 25g
젤라틴 3g
생크림 60g
크림치즈 120g
젤라틴 3g
생크림 60g
딸기퓌레 100g
▶레시피
1. 냉동 딸기와 설탕을 냄비에 넣고 딸기를 으깨며 끓이고 걸쭉해지면 레몬즙을 넣고 살짝 더 끓인 뒤 그릇에 담아 식힌다.
2. 같은 방법으로 블루베리 퓌레도 만든다.
3. 부순 다이제 쿠키에 녹인 무염버터를 넣고 섞은 뒤 15cm 틀에 넣고 꾹꾹 눌러 깔고 냉장실에서 굳힌다.
4. 크림치즈를 부드럽게 풀고 찬물에 10분 정도 불리고 전자레인지에 10초 정도 돌려 완전히 녹인 젤라틴을 넣고 섞는다.
5. 생크림을 부드럽게 뿔이 살짝 서는 정도로 휘핑하고 크림치즈에 넣고 섞은 뒤 식힌 블루베리 퓌레를 넣고 섞는다.
6. 짤주머니에 옮겨 담고 틀 옆면에 모양을 내며 짜고 냉동실에서 20분 정도 굳힌다.
7. 크림치즈에 설탕을 넣고 부드럽게 풀고 녹인 젤라틴을 넣고 섞은 뒤 묽게 휘핑한 생크림을 넣고 섞는다.
8. 짤주머니에 담아 틀에 모양을 내 짜고 냉동실에서 20분 정도 굳힌다.
9. 크림치즈를 부드럽게 풀고 녹인 젤라틴을 넣고 섞은 뒤 묽게 휘핑한 생크림을 넣고 섞고 딸기 퓌레를 넣고 섞는다.
10. 틀에 붓고 평평히 한 뒤 냉장실에서 3시간 정도 굳힌다.

For the ones that don’t know the “pure” is literally jellly so if you don’t want to do all that you can use that instead. That’s how I’d make my jelly when I was little my grandma taught me ☺️

I made one peach cheesecake(added real peaches too!) and one mixed berry cheesecake only using bread jam of each flavour, cream cheese and half-whipped whipping cream. I did not add any sugar as the jams are already sweet. And it took me less than 30 mins to make both!
