우아하고 사랑스러운 색감의 딸기 더블 프로마쥬 치즈케이크를 만들었어요~
밑에는 딸기 가루를 넣어 치즈케이크를 굽고 위에는 마스카포네 치즈를 사용한 레어 치즈케이크라서 2가지 치즈케이크를 함께 즐길 수 있답니다~
딸기와 어울리는 핑크색으로 제누와즈를 구워 겉에 묻히고 생딸기를 레어 치즈케이크 층에 함께 굳혀 더 사랑스러운 느낌이 나는 것 같아요~
자르면 생딸기가 단정하게 들어있어 고급스럽고 우아한 치즈케이크랍니다~
치즈케이크를 구울 때 틀 안에 테프론시트를 두르고 구우면 틀에서 분리하기 쉬워진답니다~
딸기 가루를 넣어 케이크를 굽고 생딸기도 넣어 딸기 맛이 많이 나서 더 상큼하게 먹을 수 있었어요~
제누와즈의 색과 베이크드 치즈케이크의 색을 비슷하게 맞추면 더 깔끔하고 예쁜 것 같아요~~
보고만 있어도 사랑스럽고 포근한 느낌의 치즈케이크인 것 같아요~

▶틀 사이즈 Mold size : 15cm x 7cm
▶재료
달걀 3개
설탕 75g
꿀 8g
바닐라익스트랙 2g
무염버터 25g
우유 40g
박력분 90g
핑크 식용색소
크림치즈 200g
설탕 40g
달걀 1개
바닐라익스트랙 2g
레몬즙 3g
생크림 40g
박력분 6g
딸기 가루 5g
핑크 식용색소
마스카포네치즈 150g
설탕 30g
바닐라익스트랙 2g
판젤라틴 3g
50% 정도 휘핑한 생크림 150g
▶레시피
1. 뜨거운 물이 담긴 냄비 위에 달걀이 담긴 볼을 올리고 설탕, 꿀, 바닐라익스트랙을 넣고 온도가 40도 정도가 될 때까지 저으며 섞는다.
2. 핸드믹서로 풍성한 아이보리색의 거품이 될 때까지 휘핑하고 핑크 식용색소를 넣어 색을 낸 뒤 박력분을 체 쳐 넣고 섞는다.
3. 녹인 무염버터, 우유가 담긴 (온도 50~60도) 볼에 반죽의 조금을 덜어 넣고 섞고 본반죽에 넣고 섞은 뒤 18cm 틀에 붓고 170도 예열된 오븐에서 30분 정도 굽는다.
4. 식힌 시트의 윗면과 밑면을 잘라내고 2장으로 자른다.
5. 크림치즈를 부드럽게 풀고 설탕을 넣고 섞고 달걀, 바닐라익스트랙, 레몬즙을 넣고 섞는다.
6. 생크림을 넣고 섞고 박력분을 체 쳐 넣고 딸기 가루 섞은 뒤 핑크 식용색소를 넣어 색을 낸다.
7. 15cm 틀 바닥에 케이크 시트 1장을 깔고 치즈 케이크 반죽을 붓고 150도 예열된 오븐에서 25분 정도 굽고 실온에서 식힌 뒤 냉장실에서 차갑게 식힌다.
8. 마스카포네 치즈에 설탕, 바닐라익스트랙을 넣고 부드럽게 풀고 녹인 젤라틴을 넣고 섞은 뒤 50% 정도 묽게 휘핑한 생크림을 넣고 섞는다.
9. 식힌 치즈케이크 위에 반으로 자른 딸기를 올리고 치즈케이크 반죽을 붓고 평평히 한 뒤 냉장실에서 2시간 정도 굳힌다.
10. 남은 케이크 시트 1장의 테두리를 잘라내고 체에 걸러 가루로 만든다.
11. 굳힌 치즈케이크를 틀에서 꺼내고 조금 남겨둔 치즈케이크 반죽을 전체적으로 바르고 케이크 시트 가루를 묻힌다.

Pink food coloring
200g Cream cheese

40g Whipping cream

5g Strawberry powder
Pink food coloring
150g Mascarpone cheese
30g Sugar
2g Vanilla extract
3g Gelatin sheet
150g Whipped cream (whipped up 50%)

I made this cake for my quarantine birthday and it tasted great! i used double the amount she did because my cake was bigger. everyone ate it so fast i kinda want to make it again for my sisters birthday :) highly recommend this recipe.

나는 트릭이 없다고 생각합니다. 딸기를 자른 사람은 딸기를 자르지 않고 딸기의 측면을 보여주는 대신 반으로 자른 것을 볼 수 있기 때문에 완벽하게 자르지 않았을 수 있습니다. 그래서 요리사는 무작위로 자르지 만 매끄럽게 보입니다.
과일을 많이 넣어서 어딜 자르던 예쁜게 아닐까요 ㅋㅋ...
