    얼그레이 밀크티 향이 좋은 밀크티 크레이프 케이크를 만들었어요~
    밀크티를 이용해 커스터드 크림을 만들고 크레이프 반죽에도 얼그레이 가루를 우유에 우려 넣어 풍미가 정말 좋아 맛있답니다~^^
    밀크티 커스터드 크림을 듬뿍 넣었더니 크림이 쫀득하고 입에 착 감겨서 더 맛있었던 것 같아요~~
    반 정도의 크레이프는 가운데 구멍을 내서 타피오카펄을 넣어 주었는데 함께 먹으니 쫀득함이 식감을 더해주네요~
    겉면은 자연스럽게 무늬를 내주고 윗면에도 깔끔하게 장식해봤는데 밀크티와 잘 어울리는 느낌인 것 같아요~
    타피오카 펄을 쫄깃하게 드시고 싶으시면 바로 드시는게 좋은데 저는 아이싱하기 전 냉장실에서 2시간 정도 굳혔더니 안쪽에 넣은 타피오카 펄은 조금 단단해져 있더라구요~
    만들어 먹었던 크레이프 케이크 중에 이번에 만든 밀크티 크레이프가 제 입맛에는 제일 맛있었던 것 같아요~~

    ▶재료
    뜨거운 밀크티 400ml
    얼그레이 가루 3g
    달걀노른자 4개
    설탕 30g
    옥수수전분 30g
    달걀 4개
    설탕 50g
    소금 조금
    박력분 210g
    뜨거운 우유 500ml
    얼그레이 가루 5g
    녹인 무염버터 70g
    타피오카펄
    휘핑한 생크림 300g (+설탕 30g)
    ▶레시피
    1. 뜨거운 밀크티에 얼그레이 가루를 넣고 우린다.
    2. 달걀노른자에 설탕을 넣고 섞고 옥수수 전분을 넣고 섞은 뒤 뜨거운 밀크티를 조금씩 부으며 섞는다.
    3. 약불에 올려 저으며 걸쭉해질 때까지 가열한 뒤 다른 그릇에 옮겨 담고 랩을 덮어 실온에서 식히고 냉장실에서 차갑게 식힌다.
    4. 달걀에 설탕, 소금을 넣고 섞고 박력분을 체 쳐 넣고 얼그레이 가루를 넣고 우린 우유 100ml를 넣고 섞는다.
    5. 남은 우유를 모두 넣고 섞고 녹인 무염버터를 넣고 섞은 뒤 체에 걸러 냉장실에서 30분 정도 휴지 시킨다.
    6. 약불에 팬을 올리고 식용유를 바른 뒤 반죽을 붓고 넓게 펴 기포가 올라오면 뒤집어 살짝 더 익히고 팬에서 내린다.
    7. 반복해서 굽고 식히고 15cm 틀로 찍어낸 뒤 반 정도는 가운데를 원형틀로 찍어 낸다.
    8. 설탕을 넣고 묽게 휘핑한 생크림에 커스터드 크림을 체에 내려 넣고 섞어 크림을 만든다.
    9. 틀에 크레이프와 크림을 번갈아 반복해 쌓고 윗쪽에 가운데 구멍을 낸 크레이프도 반복해 쌓은 뒤 가운데 크림과 섞은 타피오카 펄을 넣고 냉장실에서 2시간 정도 굳힌다.
    10. 틀을 제거하고 크림을 전체적으로 바르고 옆면에 자연스럽게 모양을 내고 윗면에는 몽블랑 깍지를 이용해 크림을 짜고 타피오카 펄을 올려 장식한다.
    ▶Ingredients
    400ml Hot milk tea
    3g Earl grey powder
    4 Egg yolks
    30g Sugar
    30g Corn starch
    4 Eggs
    50g Sugar
    a pinch of Salt
    210g Cake flour
    500ml Hot milk
    5g Earl grey powder
    70g Melted unsalted butter
    Tapioca pearls
    300g Whipped cream (+30g sugar)

    Here are a few tips on making this milk tea crepe cake, not covered in the video or instructions. The Cooking Tree videos are wonderfully calming but they don't tell you what size pans they're using to cook with. My cake turned out delicious but I was expecting a taller cake, with more crepe layers.
    1. Double the batter to make sure you can make enough crepes for a cake as tall as what's in the video.
    2. If you don't double the batter, make sure you fry the crepes in a pan no larger than 8" in diameter. (It's safer to make more batter.)
    3. If you want a stronger milk tea flavor in the cream, don't add Earl Grey.
    4. It's not clear what "Earl Grey powder" is. There's no such thing in the U.S. except what's used to make boba tea. I'd rather use real Earl Grey leaves. Steep the leaves in the hot milk, and make sure to strain the leaves out before you mix the milk into the rest of the crepe batter.
    5. Instead of mixing the crepe batter by hand, use a blender. It'll dissolve the flour and emulsify the butter better. After blending, let the batter sit in the fridge for a couple of hours to let any air (bubbles) escape.

      You can just put some loose Earl Grey tea leaves in a pestal and mortar and grind them to make powder.

      Hi, im from indonesia and one of the cafe here sell thai tea mille crepes with some thai tea sauce. and guess what? It taste absolutely amazing!!! Gonna try this recipe and i hope the taste is quite similar

      Its actually became a popular dessert in Southeast Asia and China last year :v you could look for milktea cake videos on youtube, normally the cream is much more liquid and it will drip itself on the cake, create a lovely lava effect :))))

    one very helpful tip to anyone who wants to make this - when you are cooking the crepes, have a bowl of ice water next to you and then right before you flip it, dip your fingers in the water until you can’t feel them no more, dry your finger off and then use your fingers to flip the crepe.
    I learned this the hard way

      Expiration date doesn't say the milk is undrinkable after the date. Taste it. If it tastes like milk, it is totally fine.
      If it tastes a little sour, it can be used in crepes. Just add a little baking soda, like a teaspoon to 1 liter milk.

    here's the tip: if you add a little bit of a cooking oil in the dough then the crepes will not stick to the pan and they'll feel less oily :3

    When I'm stressed out or anxious from school/life, I watch these to calm me down. Everything looks so delicious! My boyfriend and I are going to try one of the recipes one day!     I made this for my friends' birthday! Unfortunately I overmixed the batter and the texture came out chewy :( but the taste was really nice!! The fragrance of the Earl Grey tea is nice and the cream is also not too sweet! Thanks for the recipe ❣️❣️

      A great way to get all the lumps without over mixing is to make it in a blender! Or just forget about the lumps and once it's mostly mixed pour it through a sieve to strain them out

    aesthetic as always, and I'm sure very delicious. I think crepe cakes have a much better texture and and overall structure if you do thinner layers of cream between crepes. There are some really thick cream layers here, which is fine, but you can see how the crepes look uneven after cutting into the cake because theres so much cream between layers

    완전 취향저격이에요...... 엄청맛있을거같아요......... 전부터 생각했지만 쿠킹트리님은 아이디어뱅크... 진짜루... 옆에 모양낸것도 그렇고... 가운데 비워서 펄 넣은것도 그렇고... 위에 꾸미고 슈가파우더까지......완벽해요

    Your baking reminds me of the lady from food network who would use already made shelf products to make cooking easier. You don't make any of the flavoring yourself? I see it through out your videos. For example in your Peach Cake you used canned peach, and in this one you use cheap milk tea bottle. Thats pretty cool. Cant wait to try these.

    Wow I want to try making this but a thai tea version :0 I think I would use sago pearls instead of boba because it shouldn't get hard when refrigerated (at least the black sago pearls I have seen so far; I refridgerated Taho which has black sago pearls in it and the pearls did not harded so I think it will be fine)

    만들어봤는데 떡져서 반죽 두번이나 버렸네요ㅠㅠ 팬의 문제같았어요. 버터를 팬에 많이 두른뒤 튀기듯이 한장 부쳐보니 팬에 코팅이 돼서 그 다음부터는 떡지지 않더라고요..
    크림은 저에게는 좀 달아서 설탕 양 줄이는게 더 나을것 같았네요.. 크림이 진짜 맛있었어요!

    레시피 대로 만들어봤어요 펄 빼고 생각했던 케잌 맛이에요 😍 그런데 반죽이 좀 떡진다 하나 사이에 크림을 적게 넣어서 그런거 같기도 하고 ,, 버터가 많이 들어갔나도 싶어요 ,, 저도 더 연습해서 쿠킹트리님처럼 예쁜 케잌 다시 도전해보랴구요 ^^! 좋은 에시피 감사합니다

    I love this cake.. My only concern is how to keep the pearls still chewy after put thr cake in the fridge.. The home cooked Pearl always get hard after leave in thr fridge 😔.. Do you have any tips ^^

      Home cooked pearl will keep chewy even in fridge if u keep it in sugar water , but im not really sure what it will happen if put it in the cake then fridge

    Once you learn to make a basic crape it becomes so easy. The batter needs to be a good liquid like consistency and you need a good nonstick pan.
