i cover the bird with yogurt and a tiny bit of green curry, then sprinkle crumbs all over and wrap it in its own foil hoochie to cook... 3.5- 4hrs then pull the foil off to brown the crumb. never dry. delicious

well you need cook 1 hour per kilo and you said 2.5 hrs, that turkey for real purposes needed 2.5 hours more
no it'd be way overdone and dried up. Hes cooking that at 350, not a slow roaster
thats 2.5 hrs in the oven, 1.5hrs resting which is also cooking it with the held over heat, so now, it doesn't need 2.5 hrs more
