This is by far the best "scrambled eggs" video I've ever seen; very well done.

The technique Amy demonstrates here is hands down best imo. Been using this method for many years, decades, frankly. She accurately reports the misstep of adding any liquid, in her case salsa, to beaten eggs. She is using a fork to incorporate whites and yolks, many prefer whisk, but heed her advice not to add any other liquid. My two cents counsel on the matter is to use organic eggs. Organic eggs will up the consecrated essence of flavor. Tasty.

There is a PhD thesis waiting to be done on the psychological appeal of "anonymous" online comments. I'm sure people who have little sense of agency in life find it an enjoyable outlet to express pedantic opinions about all kinds of things....usually things tangential to the point of the video/article itself. A moment's superior feeling seems worth hurting someone's feelings.

I have to totally agree with what you said. I took early retirement from the gov't twice and I have seen this behavior before. Some people want to feel superior to others for a minor slip-up to hold the other person down. I've done transcription for psychiatrists with medication lists so I know how important proofreading is to accuracy. Some just have to be nasty to bring others down so they can feel superior. Bottom line, that's why they do it !

I am a newly wed and kept burning my husbands eggs. I like my eggs cooked scrambled well and he likes his eggs scrambled but a little runny. So I found this video gem and it actually worked!!! I was able to get the perfect blend of fluffy and cooked well/not runny eggs. This girl knows her biz!!! She covered just about all the errors people fall into with SCRAMBLED EGGS including add toppings while cooking. I've been doing my version of scrambled eggs for a long time and I realize that I was missing the "Fluffy" part because I wasn't moving the outside inward with a spatula while cooking...I would wait too long and then the whole thing would start developing the browning on the bottom, but I would take it off the stove fast...The only TIP I would add to the newbies is...Make sure the oil/butter in the pan is hot and JUST STARTING to POP before adding the eggs...Wonderful video!

I always knew this is the right method to do scrambled eggs but I never understood the rhythm to it, and you explained it very clearly. Thank you Amy.

Awesome! Fortunately I was shown this technique a few years back. If folks will follow your technique, they will enjoy their eggs. Much better. It took me a long time to understand that a big secret in cooking …………is cooking slow on a lower heat setting. It takes patience, but man does everything taste better lol. Thanks for the video I love it.
