    Lima Beans & Ham Hocks Recipe:
    Place 3 smoked ham hocks in a pot. Fill the pot up with water and place it over medium heat.
    Cover pot with a top and allow the hocks to simmer over medium heat for 2 1/2 hours. Add more water if it dissolves
    Chop up 2 stalks of celery, 1/2 green pepper, and 1 onion into very small pieces
    Place your bag of lima beans in a big bowl.
    Remove the cracked and rotten beans if any
    Rinse the beans with water
    After 2 1/2 hours once hocks are tender add beans to pot
    Add chopped vegetables
    Season with 2 bouillon cubes, 1 tsp of seasoning salt, 1 tsp of garlic powder, 1 tsp of black pepper, 1 tsp of sugar, 1 tsp of parsley flakes,1 big tsp of butter and 1/2 tsp of thyme
    Stir in well and allow them to cook until beans are tender and creates a nice gravy
    Once done serve over white rice

    Looks GREAT! I have a simple little tip for you and your viewers for sorting your beans that is fast. Lay your beans out on a sheet pan and make sure they are spread out. You can quickly see any rocks or bad beans. What used to take me anywhere between 5-10 minutes for smaller beans to sort through , now takes me less than 1.

    Hey. I absolutely loved this recipe. Made it recently and it turned out amazing. First time making it. Never was really a lima bean fan but they were great. Only thing different is I used canned Butter Beans and the were still good (over soaked the lima beans) Thanks for the videos. I learn alot and my husband and son loves it. Thanks

    I use 2 Tablespoons of Sugar or 1-2 Tablespoons of Maple Syrup. It adds to the Smoked flavor. Not too sweet. Some people recommend a teaspoon of Rice vinegar.

    My husband requested fresh lima beans for dinner tonight. I just made these using your recipe but with smoked ham hocks.     The recipe was okay... but whats the deal with those nails.....?!?!?!...

      Lima beans and Butter beans are the same thing. They are just known by different names. In the southern, usa and England, the beans are called butter. Meanwhile the rest of the world called them Lima beans.

    I roast my hocks and bulbs of garlic. I use that for my roux. Also, I add escarole at the very end.

    Love lima beans but I have never liked the large ones; I prefer the baby limas which have become almost impossible to find in grocery stores, at least I'm my area. Don't know why.

      They have them in Philly. They call them miniature lima beans. They're usually green tho sir

      PhillyBoyJayCooKiNgShow We have the small green ones here as well but what I'm talking about are specifically named "baby limas" and look exactly like the large ones but half the size. They used to be sold on the shelf beside the large ones in Safeway and other larger stores here in SF. They stopped selling them about two years ago.

      PhillyBoyJayCooKiNgShow There's no research to required. I've always known where to buy them. Like anything else, Baby Lima Beans can be found and bought online. As my original post noted, I was lamenting the fact that my local grocers no longer stock it on their shelves, that's all.

    Can I use plain old White beans or Northern beans instead of Lima beans? Will it be different flavor? also I have them(beans) in cans. How will I adjust recipe?

      Joe C. Yes. Northern gives off a whole other taste. I tried it when I couldn’t find my turkey butts. I myself didn’t like it

      Mirose I have a non stick rice cooker. It not only makes perfect rice but also perfect whole rolled oats. I use it all the time.

      Hello... I found the rule of thumb is 1 part rice to 2 parts water. so if you are just eyeballing it without a measuring cup- if your water is about 1-11/2 inches above the rice should be fine. Bring the water to a rolling boil for the first 5 mins then lower heat to medium or low for the next few minutes you will get good rice. You can also pick up a grain of rice, it feel hard then you know its not ready. If the water is get low and it still feels hard- then you know you need to had a small amount of water again. just keeping checking you will get the hang of it. !

      Shelly Ford I just followed the video pretty much. I did not use hot peppers but pretty much did what he did. I never went to his website but to the right of the video title clicked on the little triangle,which then gave the ingredients he used. The beans were great.

      +Michael Henry ---I buy frozen ones all the time and they work fine--I prefer ham shanks though because they have a lot more meat on them than ham hocks do

    I grew up eating lots of this shit. You got it down! I love beans in everything but growing up I always loved salt beans or ham and beans. My pops would make em and I would eat em up til they was gone. I’m introducing my girlfriend to them tomorrow and gonna see what she thinks, if all else fails I’ll be eating like a king anyways so it’s good! I put jalapeños onions bell peppers ham hocks and some bacon with my Lima beans it’s so good in a slow cooker after a long day of fishing and hunting hell yah
