    Red Beans And Rice Recipe:
    Place one bag of red kidney beans in a large size bowl
    Remove the rotten/bad beans
    Cover the beans in water and allow them to sit for at least 4 hrs
    Chop up 2 stalks of celery, 1/2 green bell pepper, 1 onion, and 3 scallions
    Chop up 2-3 smoked sausages or (andouille sausage)
    Place a pot of medium heat and add 3 tbs of butter
    Add your chopped vegetables and sausages to the pot
    Add 1 tbs of minced garlic
    Stir and allow the sausage and veggies to brown (it should take about 10 mins)
    Once they are browned add 6 cups chicken broth. If you don't have any broth left over add water
    Rinse and drain your red beans and add them to the pot along with 1 ham hock
    Add your season: 4 tbs of creole season, 2 tsp of parsley, 1 tsp of Cajun season,1 tsp of black pepper, 2 bouillon cubes and 2 bay leafs
    Stir in well and cover with a top
    Allow the beans to simmer for approximately 2 1/2 hours or until as soft as you like them
    Taste them once done and add additional season if you need too
    Poor them over some boiled white rice

    A little trick to finding bad beans quicker. Put them in the bowl of water FIRST!!! a lot of the bad beans will float to the top. Then stir the beans around slowly watch for more to float up and catch it should be bad. scoop up beans with hand and look at them easier to spot bad beans when they are wet. WORKS like charm every time

      Sophisticated Teacher most of the time you want dried beans to soak over night. If you don’t have time for that you can use can beans and drain them

    For a quick soak. I boil my beans for a couple of minutes. Remove from heat. Cover beans with a lid let it sit for a hour. Drain them. Then cook them in fresh water.

    My mom who is from the old school would put all the beans in water and let them sit overnight. All the bad beans will not only rise to the top of the water but your beans will be tender and cook quicker.

    I am a native from New Orleans and the best beans to use is Camilla Beans brand. Everybody in New Orleans uses it. You can order online. But if you want to use another brand, each is own.

    Almost killed myself eating twice. Oh, it was so good. Except I couldnt wait for the turkey drumstick to completely tender and fall off the bone.and couldnt wait for roo to set. While I ate the first batch of golden fried chicken the second batch fried to long on one side. I found a complete left over crumbly corn bread. My kids said my mom that food was so good. My husband who fussed all day suddenly went quiet he was starving. He crazy when he hungry. Thank you phillyboy

    This came out really good! I made a couple of changes. I chopped up 2 Jalapeño peppers and I used Andouille sausage. I also made some corn bread to go with it. Thanks for sharing this.

    The best! The only change I made is using Bush's canned light red kidney beans. Saves time! This recipe is fantastic!

    Try adding the bean water it will make the sauce more red instead of draining the water! I am jamaican and thats how we do it

    Mmmmmm! I made this on Saturday. I used hillshire farm smoked beef sausage. I didn't put broth in it cuz I can't have all that sodium. Kept everything else the same. It was delicious. Served it with long grain rice and chopped jalapeño on top with a green salad. Very good. I will be making this again! Thank you!

    Very good looking red beans bro. But next time you gots to bake some buttery sweet cornbread to go with them beans. A few dashes of Louisiana hot sauce over both the beans and the cornbread would have completed the dish, IMHO.
    Also, just a tip, you may be introducing people to a dish they have never tried before, so suggest ways to eat it. E.g. with cornbread, suggest condiments, pairs well with....etc... Keep up the great work.

    I'm was raised and still currently living in Southwest Louisiana! Your recipe is very close to the original except we don't use butter in our red beans. If you want creaminess in your beans soak them overnight. When your beans or done or 10 to 15 before being done you can take a cup or two of just the beans and juice and either mash it with potato masher or pass them through a blender or food processor and add back to your other beans! Your recipe is very close to our Cajun Bean Recipe. Now the Creoles cook theirs slightly different which is the New Orleans area. Both recipes are awesome! You've done a great job tackling our recipe , but just leave out the butter.. I'm a fan of your channel...You're a wonderful cook/chef!

    I did mine today with kidney beans from the tin and salted pig tails pig tails cooked seperately due to the salt then added to the red beans it was done in 1 hour onions garlic and herb seasoning included, serve with white rice.

    You really shouldn't be using a metal spoon in that nonstick pot. Very bad for you. Metal will scrape tiny bits of the nonstick coating off of the pot, then it's in your food and in your body. Only plastic or wood in nonstick cookware.
    Food looks great, though.

      Seems to be common sense, but I never really thought of it like that.. I also b using metal utensils here n there with no worries.. I just don't like stained wooden spoons or my crazy mind b having my think that no matter if u wash it, things r still soaked inside.. n that creeps me out.

There have been times I have cooked the food you make and say damn something is missing how do I get it to taste the way my daddy or grandma made it and when I saw your videos I found what I been missing.       The first time I made them, I used only chicken broth. The second time I did a mixture of broth and water. They were 10x better the first time, the water seemed to take away some of the flavor.

    wonderful! My kids killed it. So I Took some To my mom, Who was skeptical of a RUclips recipe. She didn't eat what she had made for dinner. "this is good" she said. I chose smoked neck bones, it's what I had. Super delicious, two thumbs way up

    Tried this. Great Recipe!! Just a tip, If you have chlorinated city water. the beans will pick that flavor up.

    are you cooking the beans on medium high for 2.5 hrs ? or do you bring it to a boil first and then bring it down to a low heat and simmer for 2.5 hrs

    My mom would put ham hocks in her pinto beans and as a kid I loved it (now i don’t do any pork) I know what substitutes to use for it. Try eating the red beans and rice with homemade flour tortillas.
    If you go into a Mexican restaurant that serves breakfast you’ll see some people scooping the beans with tortillas. The Goya products are one of the best. TFS, don’t know if your Latino but I 💜 my roots. If you have any Spanish/Mexican recipes please share I love to see how people put their own spin on different foods. I add cumin to my red beans.
