Smoked Turkey or Pork
1.5 lbs butter beans
1 stick butter
3 tbsps all purpose flour
1 onion
1 tbsp low sodium better than bouillon chicken base
6 cups chicken broth (low sodium)
1 tbsp hot sauce
1 tbsp worcestershire sauce
AP Seasoning
2 tbsps garlic
Cornbread:
2 boxes jiffy corn muffin mix
2 eggs
2/3 cup whole milk
3 tbsps melted butter
2 tbsps sugar
1 pinch of salt
+ honey butter (optional)

I detested lima beans growing up it was the way my mother cooked them...she didn't make us butter beans ! This looks so frickin good I'm going to have to reassess my dislike for them. Thanks Matt!
you can skip the flour by just mashing some of the beans to thicken it up

I was about to say that, too. Just smash some up on the side of the pot or pour about 1/2 cup in a bowl and blend in an immersion blender.
It's especially useful tip for the gluten-free, flour free among us '-)
I think my childhood comfort food was my Grandma's homemade Lasagna. The only way lasagna should be made. She can't make it anymore, and I miss getting to help her make it. But I'm so grateful to have those memories. And today is Actually her 98th birthday 🤗🥰 So, I'll make it for her today!

This looks similar to what my mom used make when we were kids....she would cook dry large limas, with ham hocks, a little seasoning and that was it. The broth would thicken a bit and she would serve it with rice and corn bread. I still cook this today, luckily my husband ate this as well when he was a child. It is getting chilly here on the east coast, so it is time for a pot of beans.

I grew up poor, too. We ate so many soup beans (pinto) and cornbread I thought they were in my DNA. It took until I was an adult to appreciate these amazing flavors.

Love butter beans or lima beans. My mom used ham hocks in split pea soup or anything with a bean or pea. Then growing up in an Italian catholic family, we didn’t have meat on Fridays. That rule changed but we still used Fridays for no meat meals. My mom’s best was pasta cece. Pasta with chick peas in a lite garlic and Italian herb broth. I am the only one in my family that knows all the old Italian recipes but that pasta dish is the most requested when family visits. Good foods keeps you young and memories make you smile.

@@garyweightman5936 yes, pasta cece’ is like pasta fagioli but no extra vegetables. And the broth is like a soup, where pasta fagioli is a different bean (navy or kidney beans) and the broth is thicker.

I made a pinto/navy bean mix with smoked turkey and andouille sausage. My pops killed it. I got the recipe from Rickey Smiley. It was so good!
My childhood comfort food was my mom's meatloaf. It was basically a big cheeseburger in a baking dish. She mixed burger, ketchup, onions, bread and cheese, then topped it with ketchup and slices of cheese. Served beside mashed potatoes and green beans it was the best thing in the world for a kid growing up in the 80's.
We got it exactly the same, but with three strips of bacon covernig the top in ribbons, lengthwise. Happy Days!
Favorite comfort foods in childhood came from my grandmother. She lived in Mississippi and had a huge garden. She would make fried chicken with biscuits and gravy for all of the grandkids in the summertime when we would go visit. She also made every possible vegetable from her garden. We thought we were in heaven. BTW, sugar in cornbread is a sacrilege in my family.

My mama made the best cornbread in the world. It was not sweet. I am not as good a cook as her. I will admit that I use Jiffy cornbread mix because I am a lazy cook. Jiffy is sweet but I am used to it now. I have tried to duplicate Mama's cornbread but mine always taste terrible. Kids used to come over to our house just to get a piece of her bread. I would give anything to be able to make good cornbread that is not sweet.

I thought we were the only family that had butter beans as a main meal! my mom would make it in a frying pan with butter, Parmesan cheese, garlic and bay leaves, chicken stock, onion, etc. It was delicious! There was never a single bean left in the bowl! 💃🏻🥰🙏

I love the dry butter beans and cornbread with onion. Being poor had some advantages and food was it. We did not use Jiffy mix we use what ever self rise cornmeal was on sale. Grandmother secret was to add a table spoon of honey to the cornbread mix.
That Jiffy mix is the real MVP!! Been around since 1930. Love the recipe.

I’m 67 yrs. old I grew up eating butter beans. They are southern comfort food. My favorites are Baby Lima and Fordhook Butter Beans. Grandpa grew both and grandma had us (pre-teens)shell them. Grandma made the best. Butter beans raw onion on the side with cornbread and a glass of buttermilk what else could I want!!! Thx for your video
I've loved Lima beans all of my life, but surprisingly, a lot of people don't like them. This looks delicious and I think some finely diced carrots would add to the presentation.

*UPDATE:* So I made this dish tonight using a smoked ham hock and dry, soaked lima beans. I added everything except the washyoursisters sauce and hot sauce because I got distracted when I put a plastic bag of flour on a hot burner (it malfunctioned) so I had a mess to clean up. I used water used to blanch 7 Leeks and I made a slurry from water and flour and poured it through a sieve to avoid any lumps. This soup, your recipe, netted me about 3 quarts of one of the best soups I ever made and I made a lot of soups in the restaurant I used to have. Bravo to you, sir and now I will watch the much anticipated Black Beans and Rice video of yours...cheers from Denver. Colorado..
Childhood memories are my Granny Sweet saved all of the pork or bacon grease in a can next to the oven. Somehow when she added the love to dishes you knew it was going to be something good! Cornbread, Green beans, butter beans, pinto beans, cabbage, soups, anything. I sure do miss her! Thank you for bringing back such a fond memory of mine & sharing yours ❤

O just made some Sunday. Instead of adding flour, I just mash some beans on the side of the pot to cream them and that ham hock is what i use, more flavor to me. Lawd have mercy, this looks good.

My mama used to make lima bean dumplings. Basically a pot of southern style lima beans with dumplings cooked in that broth. It was cheap and would stick to your ribs. ❤

Bring back memories. Only time we had meat was on Sundays. It did not bother us because food was so good. We did not missed the meat. Great video. You put your soul into this recipe.

Oh my word, I cannot WAIT to make this recipe! 😋 This is super comforting food! When I was growing up, my favorite comfort food was goulash, or as my Grandma called it, “Slum Gum”.
My comfort meal was salisbury steak, mashed potatoes, and green beans.
LOL...my comfort meal is still Salisbury steak, mashed, and either green beans or canned sweet corn. Maybe I should not admit it...but sometimes I buy the Salisbury TV/frozen dinners. Shameful, I know, but I must have it and do not feel like cooking!
My Mom made these frequently. When mom saved that hambone we knew some Lima beans or another bean type was going to be dinner soon. Of course we had some cornbread in a cast iron skillet to go with it or homemade biscuits 😊
Just made the last batch of lima beans from my garden (sad face). I saute the onions first and use bacon grease instead of butter. If I add a protein, I use ham but the turkey works too. Need to make cornbread next time. We LOVE lima beans and could almost eat them every night. Thanks for your take on a classic.

As a kid, Every Wednesday we had big butter beans, mashed potatoes, meatloaf and cornbread. Those were the days.
i LOVE butter beans with some smoked or leftover meat and a little seasoning. so darn good, for so little money. my childhood comfort food... probably my mom's beef tips or steak in gravy. we didn't get to have either one a lot, but she put so much love and work into them when we did and they were always amazing.
Don't laugh, but as a child I absolutely loved beef tongue. This was long before lingua tacos were ever known about too. The year that my Mom passed away, she asked me what I wanted to learn how she cooked and I said beef tongue. I took the time off from work to visit and learn how to do this. My Mom's recipe is awesome. 4 to 5 hours of low and slow deliciousness. Familita from Ecuador loved this but they make it in a pressure cooker. Mine was the best as I was told:))) And my Mom came to US from Ireland in 1955. She rocked lamb and beef tongue like nobody else:) I miss her but I have a heritage legacy in her way of cooking some damn good beef tongue that could probably rival some Mexican and Latin cuisines! And yes, it was cheap and basically unheard of to cook this in the 70's:)
I absolutely agree! I came from a farming family in the Midwest, and they never wasted anything...beef tongue has always been my favorite cut of beef. SO tender and super flavorful. It used to be considered a "throw-away" cut that could be bought for little to nothing...now it's terribly expensive.
Love, love, love beef tongue. It's super healthy, high protein and a great fat to muscle meat ratio. Sliced thin, with a bit of spicy mustard (used to eat on baguette sliced ... sourdough! ... but the flour and gluten finally got me).

I learned how to cook dried Lima beans by using water, sage, garlic and olive oil slowly on the stove. That’s it, and it’s delicious! This looks over the top. Any Lima bean dish is delicious in my world 😮
The reason is that it "sticks to the ribs". It is like having a sandwich without bread. You wouldn't do it. If the beans were not served with white rice, then the next best thing would be a slurry of some kind. Without it, the family would be hungry again within hours. My family loved Smoked Neck Bones and Lima Beans with white rice. The vegetable was almost always collard greens. Good memories. Thank you.

My childhood meal isn’t really what people think when they think of food. When I was young I liked a slab of butter ontop of a slab of cheese I used to sneak into my nans kitchen and eat it. I still eat it to this day. My family never did meals as a family so that’s mine
Black eyed peas with hambone after Christmas(leftovers) and turkey pot pie after Thanksgiving(leftovers). Only had Lima beans as a side sometimes but remember them not having much flavor and being almost dry tasting as a child. As an adult I loved them, especially butter beans which I grew👍.
Main meals were spaghetti, chili, hamburger helper, fried chicken, and Salisbury steak.
Being Hispanic I grew up on pinto beans but fast forward to later years and a friend who originated from Iowa, relocated to Texas and I had my first taste. Yummy!
Nice cornbread recipe. Best part of cornbread is the crust so to ensure everyone gets a crusty piece, I use preheated stone muffin pans instead of a casserole dish. Broken if half, they're perfect for wiping up all that scrumptious sauce without crumbling too much.

Cajun 15 bean soup was my favorite. And a good pot of pintos. Didn't get butter beans very often but absolutely loved them when I had them! I always start off with the roux though. Except when I'm making chili, then the masa goes in last.
We call those lima beans. The bigger brown ones we called butter beans. We cooked butter beans like that but with lima beans we had okra on the side.
Cornbread with jalapeño juice and or fine chopped jalapeños drizzled with honey is awesome!!…seems the honey calms the heat from jalapeño but you still get flavor and some spice

Just try to see if you like, but poke holes in your cornbread with a fork about 5 mins before done. Pour your honey butter over the top & then continue baking. The holes will shrink up & All of the goodness gets sucked in & the color of your cornbread is sparkling golden. 🎉
🌸 5:54 flour is added to thicken the sauce
You can also create equal parts of both flour and butter in small pot to create roux, keep stirring to cook out raw flour taste
I usually put cornstarch in bit of water mix well and add to any dish I want to thicken and it cooks faster and doesn’t have that raw taste 😊
Tip create cornbread from scratch, well worth it 🎉

I make Northern beans with ham shanks I cook the beans and ham shanks all together when the beans are almost done I remove the shank and shred it and put the meat back in with the beans and chop up an onion fry the onion and add a little flour and let brown with the onion and put in beans comes out so delicious with fresh corn bread
Fave childhood meal was what mom called cowboy casserole. Pork n beans mixed with ground beef and onions. Top that with can of pop biscuits, bake. Right before biscuits were done, top with shredded cheddar. 😋

My mom would take the leftovers we had during the week and made a stew. Had more stews than I could count. Always with kimchi for added touch haha always loved it. Nostalgia is such a strong effect.
I just did mine with some 🥓 drippings, onion, celery & garlic & homemade chicken stock. They turned out pretty darn good
