Spicy Pork Bulgogi (Jeyuk Bokkeum, 제육볶음)

  • Spicy pork bulgogi is marinated in a gochujang based sauce with lots of fresh garlic and ginger. Great for summer outdoor grilling or as an easy stir-fry dinner!

    ►Ingredients:
    2 pounds thinly sliced pork shoulder
    1/2 medium onion sliced
    3 scallions roughly cut into 2-inch pieces
    Marinade:
    6 tablespoons gochujang, Korean chili pepper paste
    1 - 2 tablespoons gochugaru, Korean chili pepper flakes
    3 tablespoons soy sauce
    3 tablespoons rice wine (or mirin/mirim)
    2 tablespoons sugar (or brown sugar)
    1 tablespoon honey (or oligo syrup or more sugar)
    2 tablespoons sesame oil
    2 tablespoons minced garlic
    1 tablespoon grated ginger
    1/2 small apple grated (3 - 4 tablespoons)

      @@j433 Am I the only person who makes kimchi by lining up my tub, bowl and fermentation jars in a production line in a clean bathtub and then leans over the side to do the messy work? I've never seen anybody use a bathtub as a way to avoid messing up the kitchen but it works best for me. Minor cleaning up, no splashes on worktop and easy to rinse clean. :)

    I love your channel! I lived in lovely Korea for a few years and cook Korean food often. You are so easy to watch and explain everything, thank you. I loved that big mouthful at the end!! Please show everyone how to make grilled beef ribs, they are so good too.

      Please do! You don't need to use perilla leaves. It's just nice to have as they pair well with the pork.

    lol I made a version of this for tobboki lol I use 1 table spoon of mirin 2 table spoons of oyster sauce ( this was a accident only meant to use 1 lol) 1 table spoon of soy sauce, 3 table spoons of Korean chili paste, 1 table spoon of sweet chili Thai sauce, 1/3 cup of sugar, and water. ( I might have added more sugar 😅 I tasted it after it was cooked and added more in it was a little less sweet then sweet and sour sauce) and the heat was a good amount burned but it wasn’t painful like a hot pepperoni stick. It was pretty good. (However was still to spicy for my kids they can only handle butter chicken lvl spicy or a mild pepperoni stick lol ) I ordered tobboki from a store and it was way to spicy even there chicken that was supposed to be non spicy was way to spicy 🥵. So I made my own variation, lol 😂
    I like pork bulgogi I use to order this all the time. I will try your exact recipe next time. Minus the chili flacks lol as my paste is pretty hot.

      Glad it was so good. It can vary depending on your soy sauce and/or gochugaru.

      It is, but that's what makes this dish so delicious. You can reduce it to taste and add a little more soy sauce.
