Even when you're talking Indian food, there are literally thousands of different styles. Eastern, Western, Northern, North-Eastern and Southern Indian cuisines are super different from one another in terms of spices, styles, presentation and even the basic style of cooking.

These guys lack so much in terms of knowledge, it's just mind boggling. My comfort food is Karnataka food with simple lentils and vegetables. It's so incredibly healthy! May be some chapati at night to reduce the carbs, but otherwise it's so incredibly healthy. That is a different level of cooking. It's so complex and refined. To make something that's so basic so delicious and edible is just insane. These guys are looking for flash, with all that cheese, oils, etc. It's so short sighted, simple and lacks that forward thinking.
I'm a huge foodie and I cook a lot of different cuisines at home, some of which rival even the best in the industry and it stuns me how these guys are so incredibly narrow minded and stuck in their ways. I genuinely believe that they lack the hardware to process a lot of the different flavors that many people from other parts of the world enjoy.

What they should do is keep every master chef in a seperate room while each judges the dish and see if any of them disagree. Everytime the first chef likes the food the other chefs follow suit.

Indeed there’s so much to Asia and each different country it’s very naive to try to lump them all together by saying “oh it’s Asian” “skip Asia next time” the culture and flavors change drastically from country to country. Doesn’t matter if it’s all in Asia.

Almost all Asian countries have some aspect of cooking that is similar to other Asian countries; even on opposite ends of the continent, whether it be similar ingredients, flavors, cooking styles, or the roles of those ingredients in a dish. For example, almost all Asian cuisines have some sort of dish where a saucy protein and vegetables are served over a bed of rice. This is true in Chinese, Indian, Korean, and even many central Asian countries.
Likewise, European dishes share some common aspects of cooking; even comparing France to Russia. I don't think it is obtuse to put Asian cuisine into one category in this context. I think on a global scale, there is a lot more variety to be had which was what the guy was looking for. There are 5 other continents to pick from after all...
Of course no one would say "skip Europe" because that is the style of cooking that is dominant in Canada so it would just sound weird. He might say something like "I think it's time for more cultural variety", suggesting that their style is TOO familiar.
@@zachnies13 There was a contestant in 2018 Masterchef UK called Nawamin, he was literally from Thailand and cooked nothing but Thai food, and made it all the way to the final. None of the judges told him to "skip" and cook something else. And I believe the guy who won, pretty much only cooked "great british classics". It seems a bit silly to judge someone based on what they cook instead of how they cook it and how it tastes?

In the earlier seasons, they seem to want to steer Alvin into the "tough, mean judge" role like Gordon Ramsey, which he can't really do convincingly. In later seasons they let him calm down and be himself and he more naturally falls into the "tough love, snarky judge" role. The three judges end up being more chill and natural in the later seasons and it really sets itself apart from the drama of the US version.
Frankly that’s great, I like Alvin way more later on and all the judges seem to be, overall having a better time.

In first season, the judges were trying to feel like their US counterparts, but as the show grew, you'll see their real charisma and you'd see that they're actually very nice!

If he didn't admire Alvin in the first place he probably wouldn't be able to accept any criticism at all. He likes to act independent and headstrong to hide how insecure he is about needing the approval of others to the point where he's blinded by his need for validation being fueled by it being how he measures his self-worth, so no one and nothing else matters.
Its how otherwise smart people do unwise things that hobble themselves, and something he had to start to grow out of in order to win.
The worst type of judges are the judges who purposely make you second guess yourself and just completely put you down, I felt these guys did that

@@jbunit2 this woman is only able to do cuisines from 3 of the most recognised styles in the world that are completely distinct apart from geographically, must be a bad chef. do you think he wouldve made it a point to call her out if she did norwegian, malay and french cuisines? cuz both sets of 3 have about as much as common when looking from a food perspective, which is literally the only perspective relevant to a cooking show. you really need to search up chinese indian and japanese food, put them side by side and try to find as many similarities as you can. you wont get very far.

When someone do something like that to any ingredient, it really shows that ones dont have any idea of using the given ingredient. And worst of all , it shows that he or she doesnt even tried to image or think how he can use the given ingredient. Just lazily throw it into a blender and then fried it. The dish will never goes too wrong; After all ,fried something plus fried carbs should never taste too bad, but it will never shows the whole specialty of ingredient. This is fine for homecooking, but it feels somehow disrespectful for being so lazy and uncreative in such a competition. It actually shows the lack of innovation and passions. It’s really baaaad when you see something you are inexperience and you just wanna blender it isnt it?
