Just a note......You don't want to use the pre-shredded cheese, because they are coated with a powder that can affect how this turns out. Always use the block cheese and grate it yourself.

As he peers into the sandwich.......
They get enough for Velvetta in the stores for who knows what is in it. Every time I get it out of the fridge, I here Julia Child say....flabby cheese.

That's cool. I can see all sorts of applications for making it yourself. From fancy cheese molds for parties, to laying down fresh basil leaves in the bottom of the mold, adding different herbs, spices, garlic. And even making those little cubes or triangles of laughing cow cheese out of Gruyère. Now I gotta keep my eye out on one of those cheese cutters that is a piece of marble stone with a stainless steel arm that has a stainless steel wire across to cut it nice ;-)

It is good but expensive and I am sure that what you made tastes even better and to be able to make different variations of it is the bomb. Seems to be simple and easy to make. Woot woot! Ready to make some jalapeño Velveeta mac and cheese. Thanks for sharing Mrs. V. Love ya. -Donna

I love Velveeta, especially for mac&cheese, and dips. I used to be able to buy the little 1-pound box, but my store only carries the big box, now...which is way too much for me. I really like your recipe, since I always have powdered milk and various cheeses...the gelatin isn't a problem...Woot! customized Velveeta! Thank you...

My dear Lady, hope this finds you well, can you tell me how long this will store in fridge? Have you ever froze this? I know that store bought says no, so was wondering. I made some a couple of weeks ago, made a mistake of using mild cheddar, it was very bland. We used it in mac and cheese and added extra sharp, which I will use next time. Thank you for all you do, know that you ARE very appreciated here in Michigan

Looking forward to making your recipe with just one caveat, white medium cheddar. Personally, I prefer the flavor of a white cheddar and this recipe would work great in a mac & cheese. I f I would want to make a yellow version I could always add a bit of annatto paste or sumac.

Unfortunatly I just read in a Weston A Price article that said that powdered milk has some pretty nasty additives in it...........seems "they" can't leave anything well enough alone!! Great job though as I am sure it is still more healthy than shelf stable velveeta! tootles, Della xoxo
