I always _despised_ eggplant, until I became a vegan, whereupon I grew to love eggplant! I have an Italian one in the fridge right now, and it won't work for this because it's shaped like a pumpkin. Sliced, maybe? Will give it a go that way. Thanks for posting!
@@EastMeetsKitchen We had a garden growing up, too! And, yes, constant maintenance! As an adult, I would love to have a vegetable garden, but moved into an apartment last year, so have to get farm fresh veggies from a farm store. That's where I got the eggplant, which IS pretty. : )
