- A classic Chinese eggplant recipe from Sichuan province. This is one of my all-time fav Chinese vegetable recipes. It's a Chinese eggplant recipe with garlic sauce that's spiked with chilli oil and Sichuan peppercorns. Try it served as is with steamed rice, or as part of a Chinese banquet-style spread.

Marion i was heartbroken because i didn’t have eggplant BUT i had white fish! Steamed it, tossed it in the sauce, incredible. Merci!
God created you… don’t ever change your spots! You make light work of “cooking” uniquely your own. You are loved and appreciated as you are…for your culinary talent, combined with your charming sense of humor. Thank you for trying so hard to educate those of us who are willing students.
I watched this video and made it the very next day. Marion I have NEVER followed one of your recipes and not liked it/ thought it was mediocre. Every dish I make of yours blows my taste buds away. You are one of my favourite content creators and hands down favourite cooking show across all platforms and methods. Thank you, thank you, thank you
Marion, this looks absolutely divine! I'll definitely have to give it a try - thank you!
I recently experienced that numbing quality of Szechuan peppercorns you love so much. Now I love it, too. Thanks, Marion 😃
Welcome to the world smh 😭😂
@@damien1781 It isn’t as though they are on my grocery shelf.
I LOVE eggplant. So underrated. Always looking for more ways to cook it!
By whom? It's huge in Middle East, across Asia including India, China & Japan. Everywhere in the cooking of Italy, Spain, Greece, North Africa.
I love how ever dish is undersold. This looks great & much easier than I imagined. Thank you.
I am always telling the waiters at an Asian Restaurant here in Zambia, who serve Thai food, that their food should taste like what I see in Marion's recipes 😂😂😂😂 can't wait to try this one out at home!
Mwati they can try ai?.. fellow zed gurl here🙋♀️
Cook on your own but the migrants that moved to Zambia cool differently then you would get in china Australia or America. It's probably to cater to your culture since you aren't into spicy. I could be wrong but come here to America I'll make it perfect for you.
WOW!! Your camera man helps make this simple dish looks so deliciously yummy. Thank you Marion✨🌸💕
I LOVE this recipe, I've done it over and over since you posted it...thank you Marion😍😍😍
2:06 that makes so much sense because I never have patience to salt my eggplants and they’ve never been particularly bitter.
Marion I just made this and OMG!! Soo delicious 😋
Yummy!! Thank you!❤️
Really useful tips Marion and thank you so very much for going back to the shorter version video recipes. Excellent.
I just tried your recipe today and it was super efficient! I've never made eggplant this way before (since I usually fry it) and it turned out great! Looks delicious, thank you! 😁
oh my this looks really good....mouth was watering watching the video🙈🙈
I would usually fry the eggplant. Do you find it a bit lacking texture wise? I know it makes it oilier - but the stuff at the restaurant has that beautiful crispy edge on the eggplant which I think gives an added dimension. Keen to try it this way though :) Think I might just add some crunchy garnish like fried crushed cashews
I love this so dish so much ❤
made this tonight, and it was HEAVENLY!! forgot how much i missed eating sichuan food, and this was such a quick and easy recipe to make!
OH MY! My mouth is watering. Sichuan is one of my nm most favorite dishes 😋 This going on the menu....

Great learning resource, thanks for this video
I love eggplants! We call them brinjals back home ♥️
Where is back home? Just wondering . Here in Northern California we just call them eggplants. I’m getting my garden ready for planting and eggplants have a large space as I love them cooked many ways. 🍆
Looks so delicious 😍😍
Decades ago, a Thai restaurant I liked had a to die for garlic eggplant. I have been unable to find a recipe for it, but after watching your video, I may be able to modify it to approximate that Thai dish.
I love watching you cook. Your great. So lovely just the way you put each ingredient together, your as o as your food looks. God Bless. Always believe in yourself. And your food will be as great as you are 😉😍🤩
The food looks great.
That sauce looks sooo good!
I have tried a few of your recipes, and I enjoy getting updates and trying something new. You seem to always pick some of my favorites. Or present something that I know I'm going to love. This is the first time I'm commenting because I was literally blown away by this dish. I had it once in a Szechuan restaurant in New York and have always kind of looked for it. Thank you!! fantastic :-)
Your chili oil is the bomb!
Looking lovely
I have to try this! Thank you!
Wow!!!!eggplant is one of my favorite!!thank you Marion 🌷💕💕💕though I only have szechuan peppercorn
It was hilarious watching my two friends from Sichuan grimace at the video. Apparently they fry the eggplants in. Even in restaurants from what I recall in Chongqing and Chengdu trips.
I need that steamer :-o where to find it?
This looks divine
Wow! Looks so delicious and nice! Perfect!
this looks so goood!!!
Favorite dish
definitely trying this with steamed rice, thank YOu!
Watched it this morning and off I went to the asian store to get some eggplants. Just made this recipe w opting out the peppercorns because I don't like the taste. Pretty legit. I even partnered it w fried tilapia (no salt) and ended up dipping the meat in the oil. Super good.
Thank you so much for this recipe. I am one of aubergine's fans, and will cook it as soon as I get the ingredients. It is a wonderful side dish. 👏👏👍👍
Good job Marion, keep it up!
This looks good
Wow finally im here again watching your video. once again luv it 🥰🥰🥰🥰
Unfortunately I can’t find any of these ingredients where I am (Eastern Europe and Istanbul) but I remember eating this dish in Shanghai and liking it a lot 😊

Calling all vegans out there...this is a great meal for you guys and gals!!! thanks Marion!
Looks yummy....
I'll be making this , Thank you.
Omg so yumm! 😋 I wish I can get hold of your chilli sauce! Steaming the eggplant is also a good technique I wish I have thought of that. As we either boil it or put it in the oven. But will definitely try this technique thanks Marion! ✨
That looks juicy and delicious and spicyyyyyyyyyy 😆 I love eggplant
Spicy and yummy 😋
That looks delicious 🤤🥢🥃🍜
Cut green onion 2 inches length. Eggplant (de-skin whole egg plant, pan press & stir fried with sufficient oil till throughly cook soft)

Zbrdast eegplant recpie
Love this recipe, thx Marion. I am from Melbourne Australia and would love to know where to buy green Sichaun pepper. The pepper I use seems to be really insipid.
In Chinese restaurants, they actually fry the eggplants but I guess for a healthier choice; steaming will be a better alternative
Nice
That was delicious ! I added 1 or 2 tbsp of water because I thought it looked too thick, but it wans't a good idea because the eggplant still render a bit of water when you gently mix them with the sauce. It was delicious nonetheless, but next time I'll be sure not to add any water. Thank you for this recipe!
Can you show us a Hunan Spicy Pork recipe Marion?
I'm still thinking If i should make this my favorite
Please make a list of sauces and spices for your recipes. At least a must have. I really really love your chilli oil recipe. I keep some always. So good. Especially on bland American foods.
I don't care for eggplant can I use another squash?
Great video. I was was actually looking for Thai spicy eggplant but I think I will use this as inspiration as I have some Szechuan peppercorns on hand, as well as most of the other ingredients. I think I may try baking my eggplant though. I don't own a good steamer and I think that method might work.
I love you Marion 🥰
Nice spices
Sarap nito
Perfect timing.
That’s dinner 😘

Nice one
I would love to know more about the pot you used… saw you use it another video.. it looks multi purpose 😁.. defs going to try this dish

Hello Marion Happy mother Day thank you for your the most wonderful super delicious yummy yummy Recipe and thank you for your beautiful video 💞💞🍁💞🍁🍁🥰💓💖💖🥰🍁🍁💞🌺🌺🌺🟨🟨🌸🌺💗♥️♥️♥️😍🌾🌹🌹🌾🌼😘🌼🔵❤️❤️🟥🌻🌻🌷🌷🎈♦️♦️♦️🟢🟢🪸🟣🟣🟣🪸🟢🍂🍂
Steamed and not fried, YES!
Aloha, Marion. Thank you for this recipe. I’ve been wanting to cook a spicy aubergine recipe with the lovely local-grown produce available here in Hawaii 🍆 🇺🇸 🇬🇧
Query: I noticed you peeled with a serrated peeler - was this deliberate or will a non-serrated peeler be fine?
I'd guess that the serrations help you keep some of the skin on - you could achieve that with a normal peeler if you wanted I reckon
@@cheekyb71 thanks. I have both kinds; just curious…
685 👍done Eid Mubarak dear really so nice and delicious recipe amazing Sharing full time watching Like your new video nicely prepared thanks for sharing 🌸💕👌
Love you videos! What brand is the steamer? Never seen one like that with a ceramic lid.
I cant wait to try! Any recommendations on other veggies/protein we can use this sauce with? Over pasta? Something about the numbing fiery sensation just makes me want to pour it over everything!
I think you can use this on any steamed veggies honestly. As a matter of fact, i dipped my fried tilapia (no salt) in the sauce and it was great! It can also top tofu
I'm obsessed with this pot she's used in recent vids. Anyone know what brand it is?
The food you made looks amazing but the steamer caught my eyes! What brand is that please?
Hi Marion...if I buy bamboo steamer do I need to purchase a separate metal disc to sit the steamer on as it cooks? or can the steamer be set directly into the simmering water? Thanks (can't wait to try this recipe, adore eggplant)
LOL. If I had tried to replicate this recipe at home, it would have been a disaster. Thanks for sharing. This looks yummy but easy to make.
You can definitely boil eggplant! I do it all the time as a healthier alternative to frying. You have to keep it whole or at least in large chunks though, and cut it up after it's cooled a bit. Some vinegar in the water and making sure it stays submerged helps it stay purple. I'll definitely try steaming it now though.
This used to be my favourite dish at New Shanghai nights until they changed owners and it got gwylo spicy 🥲
