    Ingredients:
    4 eggs
    1/2 onion, finely chopped
    1/4 carrot, chopped
    1 green onion, chopped
    Salt to taste
    Black pepper to taste
    Vegetable oil for cooking
    Directions:
    1. Prepare all the vegetables.
    2. In a large bowl beat egg, salt and pepper. Add chopped vegetables and stir until combined.
    3. Heat a medium size pan greased with oil on a low-medium heat. Pour about ¼ of the egg mixture, making sure that all the surface of the pan covered. Cook about 1-2 minutes, until half cooked. Then start to roll gently into a log, leaving small part unrolled. Move the egg roll to one side of the pan and grease the pan with little bit of oil. Pour another 1/4 of egg mixture to the empty part and cook 1-2 minutes more, until half cooked. Repeat with the remaining egg mixture.
    4. Transfer to a plate or a cutting board and slice.
    Notes:
    • You can use any other vegetables that you like. For example: broccoli, bell pepper and more.

    Hello😊. I am Korean.
This is a Korean-style egg roll.
Japanese style egg roll is sweet and soft, but Korean style egg roll is made with vegetables.

Japanese people also put ingredients in Tamago-Yaki at home.
For example, green onion, imitation crab, the others.
But restaurant style usually has no vegetables.
Restaurant stye is called Daishi-maki-Tamago which is a kind of Tamago-Yaki.
And there are roughly two types of Tamago-Yaki.
One is sweet, and the other is salty.
About half of Japanese people prefer salty one over sweet one, and some people who prefer salty one hate to eat sweet one.
So Japanese Tamago-Yaki is not always sweet.

Nice cooking skills! But I don't think I've ever seen tamagoyaki that had vegetables in it (I live in Japan).
Also if you'd like to get closer to the Japanese method of doing it, the layers need to be thinner and more densely stacked. So you need to be faster with flipping it and faster with tilting the runny egg to the edge than is done in your video. there shouldn't be any browning on any of the egg layers, it's supposed to be solid gold in color with no white curds visible and in texture.
and to be super purist..you should get a tamagoyaki pan, they're kind of square/rectangular shaped with a slope on one side to help flip the egg more easily. they can be bought for around $10 online. they are small and thus make it easier to make the thin layers needed for a good tamagoyaki.
on a side note if you like tamagoyaki, which is usually sweet, check out something called dashimaki which is basically a tamagoyaki simmered in a savory dashi soup. pretty different eating experience.
