Easy Microwave Lemon & Lime Curd

- I have an easy way to make Lemon or Lime Curd... a microwave method! This is a great and easy way to make curd. If you've seen my video for my lemon and lime mousse cakes, they require lemon and lime curd for the recipe and this is a perfect way to make it! I only show making the Lime Curd, but it is the same way with the lemon. You will just use less lemons since they are larger. Live, Love, Eat Sweets!
Microwave Lemon & Lime Curd
Ingredients:
• 1/2 cup Butter, melted and slightly cooled
• 1 cup Granulated Sugar
• 3 large Eggs
• 1 large Egg Yolk
• 1 cup Freshly Squeezed Lemon Juice or Lime Juice (you will need more limes then lemons)
• Zest of 1 Lemon or Lime
Directions:
1. In a large microwave-safe bowl (you will need a large bowl), whisk together the melted butter and granulated sugar.
2. Add the egg yolk and eggs, and mix until well combined, then add the lemon juice and zest and mix until fully combined.
3. Microwave on high in 1-minute increments, making sure to remove the curd from the microwave and mix well after each increment. The lemon curd is done once it coats the back of a spoon, it usually takes about 5 minutes. Yours may take a little more or a little less time.
4. Remove from the microwave and pour the curd through a fine mesh strainer into a clean, heat-safe container.
5. Place a piece of plastic wrap directly on top and allow to cool completely. Then pour into a sealable jar and refrigerate until ready to use.
6. Enjoy!

The Video is freezing for some reason at 3:50, if you jump to 5:50 the video continues. All I do during that time is add the Lime juice and start microwaving and stirring in-between 1 minute intervals. I will continue to try to fix this issue.

This apparently just started, I am not sure what is going on with youtube. I have double checked my video in editor and media player it is fine on my end. I have uploaded it 3 times today and everyone of those is freezes at 1:49. I am trying to problem solve this. I apologize for the inconvenience and thank you for bringing it to my attention.
If you jump to 5:50 it starts playing again. I am still trying to figure out why it is freezing in those 2 minutes.
It is working fine now!
