Don’t know what I did wrong, but my caster sugar wouldnt melt! Wasn’t going to waste my ingredients, so, although out of your order, I put in the lemon juice, and it melted with stirring. Followed the rest of your recipe and I have delicious lemon curd! I am keeping the two pots in the fridge and can barely stop eating it… thank you for a quick recipe!

I made a great lemon and lime curd. I added some poppy seeds too. I like to try something different but I used this as a basic recipe. It turned out great. Next time I am going to make a lime or fruit curd and see what happens.
