    Ingredients:
    175g / 6½oz Self raising flour, If using plain or all purpose flour add an extra 1½tsp baking powder
    120g / 4½oz Granulated sugar
    175g / 6½oz Vegetable or Sunflower oil
    4 Large eggs
    1tsp Baking powder
    ¼tsp Salt
    1 tsp Vanilla extract
    1tsp each of ground Cinnamon and ground Nutmeg
    60g / 2oz butter: cubed
    5 or 6 Medium size apples
    2tbls Lemon juice

    Where I went to school everything was made on site, this was one of my favourites, also the plain sponge served with custard and a generous glut of syrup from a large jug. Seconds were a must 😋

    I made this desert today, used my digital scales,I would say it’s the lightest, tastiest, easiest sponge ever to make, I served it with double cream( for him in doors) & Greek Jogurt for me (short of milk to make custard) I would tell everyone, “ make this pud it’s delicious”, thanks John, stay safe x

    Another great recipe! Thanks John. I made your apple crumble last week and just took this one out of the oven and am enjoying it with a dolllop of vanilla ice cream. We like the combination of apple and blackberry in our house so for both recipes I reduced the amount of apple and made up the weight with some frozen berry mix (blackberries, raspeberries, and blueberries). Delicious! I expect your channel is going to get more popular due to the current situation so thanks again for all the great recipes.

    Just made the spice mix - WOW. attempting apple, plum and ginger with the sponge. Fingers crossed it turns out OK. Timer on and 50mins to go. 😋

    I found my apple corer/slicer in a charity shop for 50p. I haven't had eves Pudding since my Mum passed away, so I will be definitely trying this recipe 👍👍

    I just love your video. For those who cook in farenheit, there's no such thing as odd Temps like 338 degrees. The marks are 200, 225, 250, 275, 325, 350, 375, 400, 425, 450, 475, 500, broil. Regardless of whether you have gas or electric.

    John i just watched a program on how the grow and harvest vanilla pods. It is all done by hand, even how they dry the pods. That is why they are expensive.

    Vanilla pods in Australia that are typically sold cost $8 AUD for two and they aren’t even from Madagascar, they are usually from Papua New Guinea.

    my mums from county durham...i loved my child hood...up sea burn and south shields ...the list goes on..and my mum cooks proper food ...just like you ...killer dumplings with mince n onions ...not these soggy dumplings yuk .that you can throw to wall n stick ohhhh no thankyou ...i mean whoever likes them...sorry to offend... each pallet is different hee hee..my mums the best cook ...im learning hopefully i can practice from your recipes n impress my mum...theres only so much my be-ro books are doing ...     Hi John Funny, I knew those were Gala apples before you even spoke. They have that distinctive vertical stripe to the skin. Happy to say that they are very avail here in Ontario. Same with the apple corers/slicers. Wow! You really go the extra mile with freshly ground spices. I love your attention to detail. Fabulous! Total thumbs up John! Vanilla pods here cost two to three times what yours do. Go to Ebay and you can get bundles of them for a very reasonable price. All the best!

    I agree john vanilla pods are expensive, the cheapest I have seen in Asda for two off the buggers is two pounds and 97p sorry my pound sign not working, and this looks delicious, I will certainly make, and thank you, for the recipe

    Hi john my nana used to make a lemon sponge pudding.. she would serve warm after sunday roast with custard ..i dont remember it being self saucy ,it was more like sponge cake with lemon curd... I can't seem to find a recipe

      I'm sure it would be ok. I would use slightly less as pineapple does hold a lot of juice.

    Hello I have a question, about the sugar? The recipe says 4.5 oz (which is about one cup where I live :), but the video looks like much less sugar than that! Was there by chance a misprint? Thank you for delightful video, Virginia

    I’ve tried a few of your recipes and I love them. By coincidence, earlier today I used the sponge recipe from your lemon and orange cake to make cupcakes, only instead of lemon and orange, I used apples, as I’ve got 10kgs to use up. I didn’t think to add cinnamon and nutmeg, but my husband doesn’t like cinnamon too much, so it was probably for the best. Anyway, I really appreciate your videos and I can’t wait for the next one!

      John Kirkwood oh ok, custard is my fav dessert. The one I’m familiar with is more firm then vanilla pudding, like Crème brûlée. 😋 Vanilla pudding, that I’m familiar with doesn’t have eggs or not as many, really not sure. So I’ll definitely have to make yours. Thank you so much!

    I've just subscribed John, some great easily explained recipies you have, noticed you mentioned home made rice pudding during this video, that easy to make? i remember my gran making me it when I was a kid with a skin on the top, used to love it

      You can bake the whole thing, let it sit in the fridge overnight to set up a bit, then slice it into individual portions and freeze those in separate freezer bags, that'll save you messing around trying to bake smaller ones.

    Right so ive got a pot of lo calorie pretend sugar and ive been wondering what to do with it , John’s spice mix , baked apple with that and some sultana. So I can have the apple without the sponge and not blow the diet .... made tomato soup today in my soupmaker ... very useful when your doing shifts on London Underground

      John Kirkwood John , I learn a lot from your techniques . My Mum had three boys and she decided one of had to learn to cook , me. Sadly she never lived to her grandchildren . However the son cooked his way through Uni , he had a job knocking out 60 breakfasts and he is a much better cook than me . Your cooking reminds me of my Mum’s cooking she could stick anything in a pie , she was a school dinner lady , back when that mean’t meat and two veg . But cancer took her when she was just 52.
