INGREDIENTS
- 2 eggs
- 2 egg yolks
- 1 tablespoon lemon zest (approximately one lemon)
- 2/3 cup fresh lemon juice
- 1 cup sugar
- 2 teaspoons cornstarch (optional for thicker curd)
- 2 tablespoons butter
INSTRUCTIONS
Place all ingredients except the butter in the bowl of a stand mixer and mix until well combined. Alternatively, a hand mixer can be used or the mixture can be mixed by hand.
Pour into small saucepan and place over medium heat. Stir constantly so mixture heats evenly and does not clump. The mixture will thicken.
When it coats the back of a spoon and is about the thickness of pudding, remove from heat and immediately strain to remove any clumps or bits of cooked egg.
Stir in butter.
Place plastic wrap directly on curd surface to prevent skin from forming.
Chill and use.
NOTES
Keeps 1-2 weeks refrigerated or up to 3 months in the freezer. If frozen, thaw overnight in refrigerator to use. Хобби

I just made this at 1am and it turned out perfect!! I can't wait to use it tomorrow for my Polish Kolaczki:) It tasted so good, I licked the spoon clean! I loved how it only used 2 tbsp of butter:) The color is so beautiful and natural!!!

It came out so good... better than the one I bought from a bakery a couple of months before! I know this lemon curd will go great in the center of a cake!!

Use a bit more water, but (no) eggs (and add a little vanilla, after cooking) this makes a wonderful lemon sauce, which is delicious. We always poured it warm over fresh gingerbread or Christmas plum or fig "pudding." Yummy!

Yeah i think it depends a lot on the bitterness of your lemons. Maybe his lemon was very bitter?
