    Here is the written recipe that I wrote based on the video...
    Ingredients
    6 cups prepared pasta sauce
    1 lb dried ziti pasta
    6 cups fresh mozarella, shredded
    32 oz. strained ricotta cheese
    1.5 cups pecorino romano cheese
    1.5 cups parmesan reggiano cheese
    8 oz. mascarpone cheese
    ½ cup breadcrumbs
    4 tbsp. melted butter
    freshly ground pepper
    salt
    olive oil (Joe and Vito’s, of course)
    Preparation
    1. Preheat oven to 350 degrees.
    2. Bring 6 qt. of water to a boil, making sure it is generously salted like sea water. Add a few breadcrumbs to the boiling water, then add dried ziti, stirring immediately. Boil ziti about 10 minutes until it’s al dente.
    3. Add a splash of olive oil to the bottom of a large bowl. Transfer hot pasta to the bowl and toss in olive oil. Add salt and fresh pepper to taste and toss.
    4. Add parmesan, pecorino romano, and mozzarella cheeses to pasta, reserving about 1/4 cup of each for the topping.
    5. Add all of the ricotta and mascarpone to the pasta mixture and stir to combine.
    6. Prepare large baking dish and ladle about 3 cups of pasta sauce on the bottom, spreading evenly. Gently add all of the pasta mixture and spread evenly. Top with another layer of pasta sauce, spreading evenly.
    7. Place baking dish in 350 degree oven for 15-20 minutes.
    8. Meanwhile, combine remaining cheese, breadcrumbs, and butter for topping.
    9. After pasta has baked for 15-20 minutes, evenly spoon topping over it and cook for another 15-20 minutes until golden brown and bubbly.
    10. Let rest for at least 15 minutes and then serve.

    Okay...so I made this today and wow...was the best ziti we ever had. I have a feeling the mascarpone cheese helped it be creamy and rich and not dry in any way. Nor was it too clumpy cheesy, just perfect. I never would have thought of adding that myself. Had to put under broiler for some reason to get the topping to be dry though a few minutes at the end. I've tried five recipes so far and all were great. Next I'm gonna try that olive oil. Can't wait for it to arrive. :)

    I'm assuming that you always have the marinara or spaghetti sauce already made up and just add the meat when you want it? I feel that ground sausage and beef add heaven to baked ziti.

    Ok, I have a weird side note.... Lol, I love the layout of your home. The stairs right there with the kitchen. I duno, I love it !!! I Dnt think I have ever seen that before. Just seems so family orientated. Kids running around right in the middle of the kitchen where your cooking. 🤷 I prob sound weird, lol.... But I like it ... Anyway, love this recipe.     I confess, this looks delicious and it probably tasts heavenly. As soon as my calorie requirement is high enough (maybe after 10 hours of highway constuction work) I will make this :-)

    For those who need this written out, you’re welcome:
    6 cups of sauce
    1lb of Ziti
    3 cups of mozarella (fresh he said with water)
    32oz (3.5 cups of ricotta cheese) strained (add sugar to taste)
    1-1.5 cups of pecorino romano cheese
    1-1.5 cups Parmesan regionno cheese
    8oz mascarpone cheese
    1/2 cup bread crumbs
    4 tablespoons melted butter
    Ground pepper
    Vito and Joes olive oil
    Bring water to rapid boil.
    Add tablespoon of Pink Saltper 1 liter of water
    Add about a tsp of breadcrumbs to water
    Stir immediately throughout until al dente (about 10 minutes)
    When done, transfer to bowl that has around 2-3 tablespoons of olive oil.
    Mix
    Add a dash of salt and quite a bit of cracked black pepper (1 - 1.5 teaspoon)
    Stir well
    Add Parmesan cheese (hold back some).
    Add Pecorino cheese (hold back some).
    Add Mozarella (hold back 1.4 of it)
    Put all ricotta cheese in
    Put all mascarpone in
    Give it a good stir to blend
    Prep oven to 350
    Put 1/2 sauce in the bottom of baking pan and even out.
    Gently put pasta right on top. Layer it almost like lasagna.
    Spread even
    Take a ladle or 2 of sauce and top/spread it across.
    Put in oven for around 15-20 minutes
    Add remaining cheeses together in a bowl
    Give it a good stir.
    Add bread crumbs and butter. Mix well and set aside.
    Open oven, evenly spread mixture on top. Put back in oven for 15-20 minutes

    I use the breadcrumbs with the pancetta and almonds from the chicken parmesan video and mix it with the mozzarella and butter and OMG

    JOE...WHAT IS THE REASON FOR ADDING BREAD CRUMBS TO YOUR WATER TO MAKE EXTRA STARCH?

      lovetina2010 the water has no starch so diluted starch. Adding some flour to the water adds starch so less is taken from the pasta and more flavor is retained. Old school tip from the masters.

      You can do the whole dish a day or two in advance. Just refrigerate until needed and then pop it in the oven to cook through. It will probably cook more evenly if you let it get to room temp before putting it in the oven. As far as leftovers, it reheats great in the microwave. Try to separate it a little bit as it's very sticky and maybe top it with some additional sauce. It will keep at least several days if not a week in the fridge. You don't need all of those cheeses either. It will get kind of expensive with all of those different cheeses albeit totally delish. It's also a little too rich for my personal tastes. Definitely use Ricotta in the casserole, and then you can top it with a mozzarella and Parm or as I do, just parm. Still amazing and not nearly as expensive. When you start pricing out all of those cheeses it can give you sticker shock. It's probably $30-$40 just in cheese the way Joe makes it. I hope this helps.

      I just posted something similar. All those cheeses are expensive as hell. I'm sure it's delish, but I make it with just Ricotta, and top it with a little parmesan and it's great, relatively inexpensive and feeds a lot of people.
