    Olive oil to coat pan
    2 cups heavy cream
    1lb fettuccine
    1/4 cup onion
    2 cloves garlic
    Pinch of nutmeg
    2 egg yolks
    1/2 cup parmesan cheese
    1/2 cup romano cheese
    1 stick unsalted butter
    Salt and pepper to taste
    Splash of white wine
    1 red towel over shoulder

      @@rodgerpalmer9872 actually she would laugh at you for thinking Alfredo sauce is Italian. You cannot get Alfred sauce in Italy, but a sauce that resembles it. which is a butter and parmesan sauce . But it's not called Alfredo. 🤷

    Made this last night and it was soooooooo bomb . Thank you! I used Chardonnay and let it bubble until I could no longer smell the alcohol. I added spinach (just for a veggie) more garlic (never too much) and I used a sweet onion that I minced. I served it with blackened Cajun chicken on top and it was DEVOURED!!! this recipe is the BEST

    Suggestion: Never brown the garlic. Put it in after the onion has cooked a bit.

      Exactly. Makes it bitter. I would add it with the butter. But I use a garlic press so it's minced. It just melts away and once you add the wine it cooks it thoroughly. But you already knew that. Lol

    I have been following this recipe for 5 years and have only strayed twice to have a base of comparison...I have not found a recipe that compares and whenever my daughter comes home it's the first thing she asks me to make, so thanks Joe!     Made this last night for Valentine’s Day dinner and, damn! When he says the white wine, egg yolk, and nutmeg can’t be tasted but they heighten the flavors, he’s 100% correct. The sauce I made could easily compete against any restaurant.

    Omg!!! I executed this recipe to the "T" and it came out absolutely delicious! Best I've ever experienced!! It was a hit with my house of food snobs. 'Round here you have to come high and go hard... this left them giving lingering compliments, hugs and exclamations of "near tears" and "you nailed it" wafting through the atmosphere, lol. Thank you so much dear sir!! (I also made my own noodles 😎).

    Hey Joe, I was in Italy when the son of the original Alfredo was still alive in 1964. He and I became such friends that he named one of the dishes in his menu as spagitini Ala Harry which is my name., Your Fetuccini is as good as his. Bravo Senore!

    I made this last night and it was fantastic. I did not have any heavy cream so I used almond milk and cornstarch water to thicken the sauce. I added cooked spinach and broccoli as well. Don't judge. It totally worked for me, lol. I will never buy alfredo sauce again. Thank you! 😃

    I love how he did the fork and spoon. My family isn't Italian, we're Irish, but my mom thought me that. When I was out to dinner with my boyfriend and his family I ordered chicken parmigiana and I showed him how Italians eat pasta. He didn't believe me untill his mom said "yeah, do they do" and called me smart. It's surprising because I know so many people that dont know the fork and spoon technique. Love it 👌 also I'm making this dish tomorrow night for my parents and I, along with apple fritters ❤

    I’m happy to know that at no point did he ever claim that this is a historically accurate dish. It’s also a family recipe. I will never ever disrespect that. Now having that perspective I say great job this is my first time here btw. He seems personable and his instructions is on point. This fettuccine with cheesy Béchamel sauce looks delicious. I’ll be happy to try it.

      @@HelloThere..... I do eat baked goods . And yes I love honey mustard . ( I’m a coeliac so can’t eat gluten or barley etc )
      I don’t know how to explain it but sometimes I’ve eaten certain dishes and I can taste the egg in them , even though egg is not the main ingredient .
      But in other dishes I can’t ! I love Zabaglione , which is made from egg yolks . I can’t taste the eggs in that but can taste the cognac! Lol!
      I guess I don’t like a dish where I can taste the egg ! I know other people who have a similar palate. . My friend won’t eat fresh pasta or even Zabaglione as she finds them too ‘eggy’

    The addition of onion, white wine, olive oil, and egg yolk is something I have not seen before. I loved that you explained the pasta. Definitely never add oil to the pasta water, your sauce will never stick. Nice family recipe.

    My go-to Alfredo recipe. When Joe says to use the nutmeg, USE THE NUTMEG. I have never used this spice before until now and it’s a game changer. Slightly sweet and nutty - it def adds to the sauce.
    One mistake I made the second time I made it was using half-and-half. The dairy products ended up churning and clumping up. I basically had water leftover and just chunks of cheese and milk, probably because it has more water content than heavy whipping cream. So, make sure to use heavy cream for this recipe!

    This is actually one of the best recipes I've seen on youtube. Complex, but perfectly thought out at each step, and perfectly executed at every level. I personally would skip the Romano and onions, because it's less traditional than I am going for, but nonetheless for what it is, I'm impressed.

      When adding Shrimp to Alfredo I add a little bit of fresh lemon juice it takes it to another level! Just make sure to add it towards the end of cooking.

    Mr. Joe, this looks amazing. I’m half Thai but I favor more towards Mediterranean cuisines. I really love how you start the base with the olive oil, onion, garlic, nutmeg, wine, salt, and pepper. Aromatics! My step mother is Italian and she taught me how to make pasta fagioli the way her family taught her. Thank you.

    worked for an italian chef who would use two cubes of blue cheese instead and simply garnish the fettuccini with parm at the end. Reason being the dish would be lighter due to less cheese but still have a strong cheese flavor.

    Hi Joe, thank you so much for this recipe!! I am from little New Zealand and I only knew a simple chicken fettucine recipe with sour cream/full cream mix and i don't make it often. I am preparing to attend a family gathering to announce and surprise them with news of my grown daughter & husband who will be bringing a new edition to our family. The other family members will bring a variety of Samoan /Maori and European food to the table. They think they are gathering just in case we go into lock down level 3/4 for this covid 19 (it's just an excuse to gather for my surprise). Well, I just finished making your alfredo fettucine blended with my chicken, zucchini(courgette) and mushrooms - it gonna knock their socks off!! I'm trying really hard to stop myself from returning to the pot to keep 'taste testing' lol, or it will be gone or I will decide not share it and hide it in my fridge instead lol.     I knocked it out of the park tonight. For those of you without nutmeg or white wine, don't sweat it. I'm sure it gives it a little more authentic flavor but I feel it was unnecessary. I will next time add my own shredded cheese to make it a little less gritty. I used white wine vinegar and just cooked it a bit longer before adding the cream. Now with that said , I'm not a chef and I would follow Joe's to the letter. What im saying is just you do the cooking and taste everything.

      I ALSO cooked the chicken in a different pan and then removed it. Added the onion and garlic til soft and then added them to a larger pan. All an unnecessary step but I like to cook my chicken in a cast iron pan.

    I was in the U.S. Army, I was stationed in Würzburg Germany. I found this most excellent Italian restaurant. It was nothing but a small one bedroom house carved out, turned into a small restaurant but they made the most extraordinary fettuccine Alfredo!!! Of course, during foosball or soccer season, one would only be served during breaks in the game :) It was worth it. I've never found an Alfredo sauce they could even come close but your recipe looks like a it might be able to. Thank you for the video

      You hit what i first thought of. I had the best alfredo in Germany also, Hanau is where i was stationed. My favorite dish was tortellini jolli, i ciuld drink their alfredo sause, also made by Italians in a small joint. Tonys

      @@bianuccijunior5905 IT ABSOLUTELY IS! Alfredo di Lelio is the creator out of his restaurant in rome in 1914, but his was much more simple than how we make it today, it was just butter and cheese i believe.

    You're absolutely right about the nutmeg. You can't taste it but it just adds something that's so SPOT ON. I always use it with a white sauce along with just a pinch of cayenne pepper. Another thing you can't taste but does wonders for background flavor. Excellent video.:o)

      Thomas, I use garlic and onion powder and some dry mustard too. Trust me when I say use the NUTMEG sparingly lol A pinch will do.:o)

      yep nutmeg adds a nice flavor to cheese dishes especially. So great and subtle, nice in mac n cheese also, so good =)

      I've never tried a bit of nutmeg or cayenne in a recipe but I will. I don't now what it is but I've heard a bit of black paint added white paint makes it whiter.

    I made this Fettuccine Alfredo for Christmas yesterday and OMGOODNESS it was so delicious. I will never go back to jar alfredo! Everyone loved it and couldn't get enough. Definitely a keeper and will be making it again. Thank you Joe for sharing this wonderful recipe.

    I'm Maltese but raised in an Italian town. My grandfather would make his version and this is almost spot on. We would add Italian herbs (rosemary, oregano, basil, thyme) to our sauce, we also added a mix of asiago, Romano, parmesan provolone to the sauce. Added a different dimension to the sauce. Also no added salt. My wife is French Canadian and she even loves it.

    Just made this absolutely delicious. I didn't have wine or parmesan cheese, and It was still awesome. Also used salted butter, didn't have unsalted. Just don't add salt. Thank you Joe! One more thing this dish cannot be reheated in the microwave, you have to eat the second it's made.

    That was the best version of homemade fettuccine alfredo I've ever eaten. I did make some small preferential changes, such as shallots instead of onion and no eggs. It came out incredible! 10/10
