I love frittatas! I make them with Italian ingredients, southwestern ingredients....there is almost no limit to what you can include. Olives, jalapenos, cilantro, spinach, peppers, potatoes... different kinds of meat and cheeses, and on and on....lol.
Every video I’ve seen with Italians, Grandma made this back in the day, including my Grandmother. My Grandmother did use a cast iron pan, which I now have, and flipped the frittata, not using the oven. I just made a broccoli one today for lunch, with tomato onion salad on the side, just like Grandma made on Friday nights, especially in the summer. Fresh fruit to follow.

You can make a ham and cheese and bacon for breakfast, a veggie one for lunch, or a loaded one for dinner with potatoes, cold cut meats and sausages, crab, shrimp, mushrooms, even lobster. Season it in so many different ways, depending on the occasion. I love them and eat them all the time!!
I just made your recipe, and it was fantastic! In lieu of pancetta, I substituted diced smoked pork sausage and also added mini peppers. Thanks so much for sharing... New subbie.
Hey Joe... great recipe!! Used a cast iron pan which had not used in awhile. Unfortunately the bottom got a little too dark. I really would like to make this again but would like to try a different pan. Can you suggest one? I am looking forward to using some of your other recipes as well! Thanks!!

I wanted to know the oven temperature and couldn't find the recipe. Is it just 350, or higher? I'm going 5o make th8s with sweet potatoes instead of potatoes and see how it tastes because that's what's on hand...also got a little bacon and I like the suggestion of cutting up the spinach small. Serve with salsa maybe.
Good job Joe, just like I use to do it here in Italy! Just a tip for all the american friends: if you happen to have some cold leftover frittata just make a sandwich with it, just ad some fresh lettuce if you want. Oh, and btw: do you know that you can make frittata also with leftover pasta? ;)
