      i use wild asparagus, because i am from istria, and i have plenty of it, also caesar mushroom , and little bit of vegeta for flavour, and naturally eggs from our chickens that we have, only vegeta is bought from store, everything is homemade

    My favourite is to make it with potatoes…chop them up into about 1 cm cubes and cook them a bit first just like the asparagus.,,it’s to die for.

    Thanks Vincenzo. I really enjoy your videos. My Mom used to make these quite often but she left the asparagus whole. I don't know why she did that when it's SO much tidier and easier to eat by cutting it up.

    Going to make this today!!! With cherry tomatoes (sliced in half), black olives (sliced in half), diced onion, parsley. Should be very 'pungente'.

      @@vincenzosplate Thanks for the reply. I DID IT!!! Delicious, simple. I sliced the cherry tomatoes into three pieces and dried them a little under the broiler. My thinking was the extra liquid would be too much. Instead of parsley I used fresh basil. I also found that if you cook everything on a lower heat and cover you can skip the oven step. The top will set enough to do the flip without burning the bottom. Soooo delicious!!! I will be making this often. Thanks again.

      @@wendellcallihan5341, how low did you turn the heat and how long did you cook the frittata on the stove? 🍳 I want to try this, but I worry about burning the bottom if I keep it on the fire (I have a gas range).

      @@bsteven885 Thanks for your interest. On my electric I had the heat between medium low and medium. I also need to mention that I melted a couple pats of butter along with enough olive oil to coat the skillet. I would turn up an edge during the cooking to check and make sure it was not getting scorched. Maybe I just got lucky as mine browned perfect right when to top set (no longer runny so I could turn it over). Now if I can just get my pizza dough right.

    You can put anything you like with eggs. Love asparagus! Mushrooms and onions are my favorite. Maybe a little prosciutto. 🥰

    I was making these without even knowing what it was. I found that I didn't have to scramble my eggs after making the egg mix. Just put them in the pan with red and green peppers with onion. No flipping, no scrambling, just let it cook.

    I love makin omelettes with the same method minus the milk. I add tomato’s,spinach and onions. I will give this a try although we don’t consume much dairy. Thanks 🙏🏽 for sharing 😊

    Great simple way to prepare frittata, thank you. Other recipes tend to overcomplicate it. I want to ask on what mode do you set the oven? Was it just a fan?

      @Stephen Pruszenski, do you mean in addition to the Pecorino Romano? If so, I can imagine mozzarella or provolone melted in the frittata along with more aggressively flavored vegetables like olives or bell peppers.

    Needed about 5 less minutes in the oven. I don't like the taste of browned egg. And use a lower heat with convection so it cooks more evenly. That oven has heat distribution issues.

      @@vincenzosplateAt 6:51. The top right and some of the right side is overcooked. Come on chef, I know you see it. I know you can cook circles around me, but that is definitely browned in a few places. There's a few spots here and there too.
