I'm learning a lot watching your videos. I didn't know for the crisco shortening. U can melt it and add it that way to icing. Awesome. Love your information.
I make toppings for my mexican buns as such. I do small batches in a slightly smaller mixer. So i can actually lift the mixer bowl onto a work bench and pour n scrape the toppings out. Hope its helpful ❤
@@elitedoughcookies another good mixer high capacity (not as much as your hobart though) is the bosch universal plus. It is a top loading mixer. Less wastage when scraping. I am yet to purchase it. Coz for me it is quite expensive here.
I used to use a 40qt mixer at the last bakery I was at and when we were finished mixing we would put the bowl on the counter, put our container we were dumping into on a slightly lower surface such as a flour bin, and pour/scrape the batter or whatever we were mixing out of the bowl and into the container with a dough scraper. You are of course using a larger bowl with a bigger batch so it will be heavier, but we were able to lift our 40qt bowl full of batter or dough into the counter maybe 40lbs worth?) and you seem like a strong guy so many you could manage it?
Enjoyed the video.. but it would be helpful if you shared your recipe. I won't use a 60lb batch but I would be able to reduce the ratios for a 2 lb batch. Thanks so much!
I was going to recommend a metal ladle. I think they come in sizes up to16 and 24 ounces. That way you can scoop out all of the icing even to the very bottom of the mixer. I used to be an assistant manager at a pizza place many, many, many years ago and we used that kind of mixer. It was heavy and very efficient. But I've never made that big of a batch of icing before. I didn't know until watching this video that you could get shortening in that large of a container. But it makes sense.
Hey !! I see you use the Judee meringue powder mix. Do you use their recipie in the back of the package ? It seemed like they call for a lot of meringue powder on their recipie..

Try a small saucepan. Has a handle, can grab a lot out of the bowl and it's not to deep to clean out with a scraper or spatula.
