    Another trick to pop air bubbles is the helicopter method. When I go to thin out my base icing I use a silicone plate with raised sides. It helps me mix like how I would mix paint and I can pop a lot of air bubbles that way as well.

    I have watched soooo many videos on royal icing and common problems with royal icing, and believe me when l tell you this is the best video on why these happen. Yes, many of the other videos address these, but this tutorial goes into great detail as to reasons why these problems happen and how to correct them. I appreciate the personal experiences used to compare different methods to remedy these problems. Love the “cause and effect” explanations. I’ll be subscribing.

    thank you this helped me realize why my royal icing never dried, i was so devastated when i found them still wet after a whole day of drying

    Thank you for the viewpoints!! My first foray with Christmas sugar cookies was mildly successful, but my flood consistency icing (4 colors+ white) stayed at room temps during my slow decorating, causing it to thin out too quickly. I'd place in my fridge between batches to firm up, and it helped to an extent. I think that my use of tips instead of tipless bags may have contributed to the issue. However, I was happy with the outcome concerning the drying process, as I used an airbrush and stencils thd next day. Also, I added white gel and corn syrup to the base to prevent bleeding and to add shine.
    The building of the icing consistency is still a learning process, and I know it will get better over time.

    As always, excellent information! I have never had many issues with bubbles and now I know why. I have always used a fairly small hole in my piping bags! 😉 Thank you!!

    I’m just beginning my journey with royal icing, but I’ve already learned so much from your videos! It really helps me in my in-person classes I’m taking. The things I learn in class just make more sense.💡I appreciate that you also talk about the chemistry of icing & cookies. That is such valuable information, as it may help answer other questions down the line. 🧐And bonus: I love seeing how you decorate your cookies! They give great inspiration!
    As a final note, your voice & tempo is very calm & easy to listen to. Makes it easy to binge watch your videos. 😊

    When I first started with cookies, I kept reading about people beating their base icicng for 10 minutes on high---I tried it and yep, sure enough it didn't dry. My biggest problem today isn't craters but those pesky air bubbles--I'll try your suggestions to see if I can make things better. Thank you.

    Thank you for such a helpful video🌈 I was curious if it’d still be possible to use a hand mixer instead of a standing mixer with a paddle? I don’t have the funds currently to buy a stand mixer and only have a hand one with whisk attachments.

      Sure can! Just be on the lookout for the correct phases of making your icing and you should be good.

    That is what happened to me ( it’s not drying) its been almost 14 hours ? Should it take more time to dry ??

      It depends- in the video, I talk about base icing, overbeating, oversaturating and what the symptoms are for those things. So if that’s happening to you, change one thing at a time until you eliminate the issue,

    What do you do for shine? My cookies are always dull looking when they’re dried? How can I get them to have a shine after they’re dried?

      Shine is retained by getting airflow on your cookies while they dry. Check out our video on dehydrators :)

    Kinda off topic, but if I iced my cookies and was not happy with the results. Instead of re baking is there any way I can start over with the same cookie once it has dried.

      You can scrap the icing off - not perfect but that’s the only way.

    Why my icing turn yellow when it dried ? It only happened recently ...

      I have no context to your environment, ingredients, recipes or methods so without that info and not seeing any photos or videos, it’s hard to say. collect all this info and send me an email - what you did before vs. “recently”

    I'm dying, in 3 years never had problems with my icing and now, it is 2nd time that the cookie is messing up them.
